Spooky Sprinkle Surprise Cupcakes

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup Halloween sprinkles
  • 1 cup prepared vanilla frosting
  • Additional sprinkles for topping

Instructions
 

  • Preheat the oven to 350°F and line a muffin tin with four cupcake liners.
  • In a mixing bowl, stir together the flour, sugar, baking powder, and salt.
  • Add the melted butter, egg, milk, and vanilla extract. Mix until the batter is smooth and no dry streaks remain.
  • Spoon half the batter evenly into the four liners. Drop one teaspoon of Halloween sprinkles into the center of each cupcake.
  • Cover the sprinkles with the remaining batter and smooth the tops lightly.
  • Bake for 18 to 20 minutes until a toothpick inserted in the center comes out clean.
  • Let the cupcakes cool completely in the pan, then spread vanilla frosting over each one and finish with extra sprinkles on top.

Notes

Choose sprinkles that are labeled as non-bleeding if you want the centers to stay bright. The cupcakes keep well in an airtight container at room temperature for two days. For a stronger surprise, press the sprinkles down gently before adding the top layer of batter so they stay clustered in the middle.
