Sun-Dried Tomato and Spinach Orecchiette Salad with White Beans

Ingredients
  

  • 8 ounces orecchiette pasta
  • 1/2 cup oil-packed sun-dried tomatoes, drained and chopped
  • 3 cups baby spinach
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions
 

  • Bring a large pot of salted water to a boil. Add the orecchiette and cook until al dente according to package directions. Drain the pasta in a colander and rinse briefly under cool water to stop the cooking.
  • In a large mixing bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, red pepper flakes, salt, and black pepper.
  • Add the drained pasta to the bowl with the dressing. Toss to coat evenly.
  • Stir in the chopped sun-dried tomatoes and the drained cannellini beans. Mix until everything is combined.
  • Add the baby spinach and toss gently so the leaves are distributed throughout the salad without bruising.
  • Sprinkle the grated Parmesan cheese over the top and give the salad one final light toss. Cover and chill until ready to serve.

Notes

Add the spinach right before serving if you want it to stay crisp longer. The salad tastes even better the next day once the pasta has soaked up the dressing. If it seems dry after chilling, drizzle on a little extra olive oil and vinegar before tossing again.
