Cuisine Thai
Servings 4 people

Equipment

  • Large pot
  • Medium pot
  • Colander

Ingredients

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons Thai red curry paste
  • 1 (14-ounce) can coconut milk
  • 2 cups beef broth
  • 1 red bell pepper, thinly sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 8 ounces rice noodles
  • Juice of 1 lime
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped peanuts (optional)

Instructions

  • Brown the ground beef in a large pot over medium heat, breaking it apart with a spoon as it cooks. Drain any excess fat once the beef is fully browned.
  • Add the diced onion, minced garlic, and grated ginger to the pot. Cook for 3 to 4 minutes until the onion softens.
  • Stir in the Thai red curry paste and cook for 1 minute to release its aroma.
  • Pour in the coconut milk and beef broth. Add the sliced red bell pepper, fish sauce, and brown sugar. Bring the mixture to a simmer and cook for 10 minutes.
  • While the stew simmers, cook the rice noodles in a separate medium pot according to the package directions. Drain them in a colander.
  • Stir the lime juice into the stew. Divide the drained rice noodles among four bowls and ladle the stew over the top. Finish with chopped cilantro and peanuts if using.

Notes

Cook the rice noodles right before serving so they stay firm instead of absorbing too much liquid from the stew. If the curry paste brand runs hot, reduce it to one tablespoon and taste before adding more. Store leftover stew and noodles in separate containers in the fridge for up to three days, then reheat the stew gently on the stove and add fresh noodles when ready to eat.
