Thai Peanut Beef Noodles

Ingredients
  

  • 1.5 pounds beef stew meat
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 can (13.5 ounces) coconut milk
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 red bell pepper, sliced
  • 8 ounces rice noodles, cooked according to package directions
  • 1/4 cup chopped peanuts
  • 2 green onions, sliced

Instructions
 

  • Place the beef stew meat in the slow cooker.
  • In a bowl, whisk together the peanut butter, soy sauce, coconut milk, brown sugar, lime juice, garlic, and ginger until smooth.
  • Pour the sauce over the beef and add the sliced red bell pepper.
  • Cover and cook on low for 6 to 7 hours until the beef is tender.
  • Stir the cooked rice noodles into the beef and sauce right before serving.
  • Top each bowl with chopped peanuts and sliced green onions.

Notes

Stir the noodles in at the end so they stay firm instead of turning mushy. If the sauce thickens too much during cooking, add a splash of water or extra coconut milk to loosen it. Leftovers reheat well with a little extra liquid to bring the sauce back to the right consistency.
