Turkey and White Bean Chili

Ingredients
  

  • 1 pound ground turkey
  • 2 (15-ounce) cans white beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes with green chilies
  • 1 cup low-sodium chicken broth
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Shredded cheddar cheese and fresh cilantro, for serving

Instructions
 

  • Place the ground turkey, white beans, diced tomatoes with green chilies, chicken broth, onion, garlic, chili powder, cumin, salt, and black pepper into the slow cooker.
  • Stir everything together until the spices are evenly distributed and the turkey is broken up.
  • Cover and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • Stir the chili once more before serving.
  • Ladle into bowls and top with shredded cheddar cheese and fresh cilantro.

Notes

For an even quicker start, use frozen diced onion in place of fresh. The white beans help thicken the chili naturally as it cooks, so no extra thickeners are needed. Leftovers reheat well on the stove with a splash of broth to loosen the texture if it becomes too thick.
