Turkey Cranberry Pinwheels in Tortilla Wraps

Ingredients
  

  • 4 large flour tortillas
  • 8 oz cream cheese, softened
  • 1/2 cup whole berry cranberry sauce
  • 12 oz thinly sliced deli turkey
  • 2 cups baby spinach leaves

Instructions
 

  • Place the softened cream cheese and cranberry sauce in a mixing bowl. Stir until the mixture is smooth and evenly combined.
  • Lay one tortilla flat on a clean surface. Spread about one-quarter of the cream cheese mixture over the entire tortilla.
  • Arrange one-quarter of the turkey slices in a single layer over the spread. Scatter one-quarter of the spinach leaves on top of the turkey.
  • Roll the tortilla tightly from one end to the other, pressing gently to keep the filling in place. Repeat with the remaining tortillas and filling.
  • Use a sharp knife to slice each rolled tortilla into 1-inch pieces. Arrange the pinwheels on a serving plate.

Notes

Chill the rolled tortillas for 30 minutes before slicing so the pinwheels hold their shape better. If the cranberry sauce is very chunky, mash a few berries first to help the spread go on evenly. These work best with large, flexible tortillas rather than smaller or stiff ones.
