Vampire Bite Apple Pancakes
Course Breakfast
Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Skillet
  • Whisk

Ingredients

  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 2 medium apples, cored and thinly sliced
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup raspberry jam

Instructions

  • In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  • In a separate bowl, beat the milk, egg, and melted butter until combined.
  • Pour the wet mixture into the dry ingredients and stir gently until just mixed. A few small lumps are fine.
  • Heat a skillet over medium heat and lightly grease it with butter or oil.
  • Pour 1/4 cup of batter for each pancake onto the skillet. Immediately place 3 to 4 thin apple slices on top of the batter and sprinkle lightly with cinnamon.
  • Cook until bubbles form on the surface, then flip and cook the other side until golden.
  • Repeat with the remaining batter and apple slices.
  • Warm the raspberry jam in a small bowl for a few seconds in the microwave, then drizzle a small amount over each pancake to create the vampire bite effect.

Notes

Warm the jam just enough to make it easy to drizzle in thin lines across the apple slices. If the apples are very crisp, give them a quick 30-second microwave steam before adding them to the batter so they soften during cooking. Leftovers store well in the fridge for one day and reheat nicely in a toaster.
