Equipment

  • Baking sheet
  • Oven
  • Foil

Ingredients

  • 1 pound pizza dough
  • 2 heads garlic
  • 3 tablespoons olive oil, divided
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 tablespoon chopped fresh oregano
  • 1 teaspoon chopped fresh thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Preheat the oven to 400 degrees F. Cut the tops off both heads of garlic to expose the cloves, drizzle with 1 tablespoon olive oil, wrap in foil, and roast for 35 minutes until soft.
  • Raise the oven temperature to 475 degrees F. Stretch the pizza dough into a 12-inch round on a parchment-lined baking sheet and brush with the remaining 2 tablespoons olive oil.
  • Squeeze the roasted garlic cloves from their skins and spread them evenly over the dough.
  • Sprinkle the mozzarella and parmesan evenly over the garlic.
  • Scatter the basil, oregano, and thyme across the cheese, then season with salt and pepper.
  • Bake for 12 to 14 minutes until the crust is golden and the cheese is bubbling.
  • Remove from the oven, slice, and serve while hot.

Notes

Roast the garlic ahead and store it in the fridge for up to two days if you want to shorten the prep on the day you bake. Use fresh herbs only, as dried versions lose their bright color and aroma against the roasted garlic. Leftovers reheat best in a 350 degree F oven for 8 minutes to keep the crust crisp rather than using a microwave.
