Watermelon, Cucumber, and Feta Salad with Fresh Mint

- 4 cups seedless watermelon, cubed
- 2 cups cucumber, sliced
- 4 ounces feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Place the cubed watermelon and sliced cucumber in a large mixing bowl.
Add the crumbled feta cheese and chopped mint to the bowl.
Drizzle the olive oil and lime juice over the ingredients.
Sprinkle with salt and black pepper.
Gently toss everything until evenly coated, then serve right away or chill briefly.
Assemble the salad no more than an hour before serving so the watermelon stays firm. If you need to prep ahead for a potluck, keep the dressing separate and mix it in just before guests arrive. A quick extra squeeze of lime at the table can brighten the flavors if the fruit is very sweet.
