Witch's Blackberry Cauldron Fizz
Course Drink
Cuisine American
Servings 4 people

Equipment

  • Saucepan
  • Fine mesh sieve
  • Pitcher
  • Glasses

Ingredients

  • 2 cups fresh blackberries, plus extra for garnish
  • 1/4 cup granulated sugar
  • 1/4 cup water
  • Juice from 2 limes
  • 4 cups chilled sparkling water
  • Ice cubes
  • 4 mint sprigs for garnish

Instructions

  • Combine 2 cups blackberries, sugar, and water in a small saucepan. Heat over medium until the berries soften and release their juices, about 5 minutes.
  • Remove from heat and strain the mixture through a fine mesh sieve into a bowl, pressing gently on the solids to extract the liquid. Discard the seeds and pulp.
  • Stir the lime juice into the strained blackberry syrup until fully blended.
  • Fill four glasses with ice cubes. Divide the blackberry mixture evenly among the glasses.
  • Top each glass with 1 cup sparkling water and stir gently to combine.
  • Add a few fresh blackberries and one mint sprig to each glass before serving.

Notes

Make the blackberry syrup up to two days ahead and store it in the fridge so assembly stays quick at party time. If the drink tastes too tart, add a splash more sparkling water rather than extra sugar. Fresh mint gives the best aroma here, but you can skip it if none is on hand.
