Finding meals that picky eaters will actually finish can take some trial and error.

Slow cooker chicken dinners keep things simple and use ingredients you probably already have.

These recipes focus on mild flavors and easy prep so dinner feels less stressful.

You can set things up in the morning and have a warm meal ready later.

The list below gives you 12 options to try with your family.

    Helpful Tips Before You Start

These tips help turn basic slow cooker chicken into meals picky eaters will actually finish.

    Start with Familiar Flavors

Stick to mild options like barbecue, cheese, or simple tomato sauce in your recipes. Strong spices or herbs often cause kids to push the plate away.

    Shred the Chicken Small

Pull the meat into fine shreds after cooking. Small pieces mix evenly with sauce and feel less like a big chunk of meat on the plate.

    Blend in Vegetables

Puree carrots, zucchini, or bell peppers into the sauce before adding the chicken. The slow cooker softens them completely so they disappear in the final dish.

    Offer Simple Sides

Serve the chicken with plain rice, buttered noodles, or dinner rolls. These neutral sides let picky eaters control how much new flavor they try at once.

Slow Cooker BBQ Pulled Chicken Sandwiches with Creamy Coleslaw

This recipe turns simple chicken into tender pulled meat coated in sweet and tangy BBQ sauce. The creamy coleslaw adds a cool crunch that balances the warm filling. It works well for weeknight dinners when you want minimal effort but still need something the whole family will eat.

The sandwiches come together quickly once the slow cooker does the work. Each bite gives you soft bread, juicy chicken, and crisp slaw without any complicated steps or strong flavors.

    Equipment

    • Slow Cooker
    • Mixing Bowl
    • Forks

    Ingredients

    • 1.5 pounds boneless skinless chicken breasts
    • 1 cup BBQ sauce
    • 1/2 cup chicken broth
    • 4 sandwich buns
    • 3 cups coleslaw mix
    • 1/4 cup mayonnaise
    • 1 tablespoon apple cider vinegar
    • 1 teaspoon sugar
    • 1/4 teaspoon salt
    • 1/8 teaspoon black pepper

    Instructions

    • Place the chicken breasts in the slow cooker. Pour the BBQ sauce and chicken broth over the top. Cover and cook on low for 6 hours until the chicken is very tender.
    • Remove the chicken from the slow cooker and shred it with two forks. Return the shredded chicken to the slow cooker and stir it into the sauce until fully coated.
    • In a mixing bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Stir until the mix is evenly coated.
    • Split the sandwich buns and fill each one with a generous portion of the pulled chicken. Top with a scoop of the creamy coleslaw.

    Notes

Shred the chicken while it is still warm so it absorbs more sauce. If the mixture seems dry after shredding, add an extra spoonful of BBQ sauce. The coleslaw can be made right before serving so it stays crisp. Leftovers store well in the fridge for two days and reheat easily in the microwave.

    • Slow Cooker
    • Large Pot

    Ingredients

    • 1.5 pounds boneless, skinless chicken breasts
    • 1 cup low-sodium chicken broth
    • 4 ounces cream cheese, cubed
    • 3/4 cup grated Parmesan cheese
    • 1/2 teaspoon garlic powder
    • 12 ounces fettuccine
    • 2 tablespoons chopped fresh parsley

    Instructions

    • Place the chicken breasts in the slow cooker and pour the chicken broth over them. Cover and cook on low for 4 to 5 hours until the chicken reaches an internal temperature of 165°F and shreds easily with two forks.
    • Shred the chicken directly in the slow cooker. Add the cubed cream cheese, grated Parmesan cheese, and garlic powder. Stir until the cheeses melt and form a smooth sauce.
    • While the sauce finishes, cook the fettuccine in a large pot of boiling water according to package directions. Drain the pasta well.
    • Add the drained fettuccine to the slow cooker and toss gently until every strand is coated in the sauce.
    • Sprinkle the chopped parsley over the top just before serving.

    Notes

Stir the sauce a few times during the last 30 minutes if possible to help the cream cheese melt evenly. Leftovers reheat best with a splash of milk to loosen the sauce again. Skip the parsley if your picky eaters prefer a plain look on the plate.

    • Slow Cooker

    Ingredients

    • 1 pound boneless, skinless chicken breasts
    • 1 cup long grain white rice
    • 2 cups chicken broth
    • 1 (10.5-ounce) can cream of chicken soup
    • 1 1/2 cups shredded cheddar cheese
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions

    • Place the chicken breasts in the bottom of the slow cooker.
    • Add the rice, chicken broth, cream of chicken soup, salt, and black pepper. Stir everything together so the rice is mostly covered with liquid.
    • Cover and cook on low for 4 to 5 hours, until the chicken is cooked through and the rice is tender.
    • Remove the chicken, shred or cut it into bite-sized pieces, then return it to the slow cooker.
    • Stir in 1 cup of the shredded cheddar cheese until melted. Sprinkle the remaining 1/2 cup cheese over the top, cover for 5 minutes to let it melt, then serve.

    Notes

    Instructions

    • Place the chicken breasts in the bottom of the slow cooker.
    • In a bowl, stir together the soy sauce, honey, brown sugar, garlic, ginger, and water until the sugar dissolves. Pour this mixture over the chicken.
    • Cover and cook on low for 5 to 6 hours until the chicken is tender.
    • Remove the chicken from the slow cooker and shred or slice it into bite-size pieces.
    • Mix the cornstarch with 2 tablespoons of the cooking liquid, then stir the mixture back into the slow cooker. Return the chicken and cook on high for 15 minutes to thicken the sauce.
    • Spoon the chicken and sauce over the cooked rice. Sprinkle with green onions and sesame seeds before serving.

    Notes

Shred the chicken while it is still warm so it soaks up more sauce. If the sauce tastes too salty, add an extra teaspoon of honey after it thickens. • 2 celery stalks, sliced
    • 1 small onion, diced
    • 1 teaspoon dried thyme
    • 1/2 teaspoon garlic powder
    • Salt and black pepper to taste
    • 2 cups uncooked egg noodles
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup cold butter, cubed
    • 3/4 cup milk
    • 2 tablespoons melted butter

    Instructions

    • Place the chicken breasts, chicken broth, carrots, celery, onion, thyme, garlic powder, salt, and pepper in the slow cooker. Stir to combine the ingredients evenly.
    • Cover and cook on low for 6 hours until the chicken is tender and shreds easily.
    • Remove the chicken from the slow cooker, shred it with two forks, and return it to the pot. Add the egg noodles and stir.
    • Cover and cook on high for 30 minutes until the noodles are soft.
    • While the noodles finish cooking, preheat the oven to 425 degrees. In a mixing bowl, combine the flour, baking powder, and salt. Cut in the cold butter until the mixture looks like coarse crumbs.
    • Stir in the milk until a soft dough forms. Drop spoonfuls of dough onto a baking sheet and bake for 12 to 15 minutes until golden.
    • Brush the hot biscuits with melted butter and serve them alongside the soup.

    Notes

Add the noodles only at the end so they stay firm instead of turning mushy during the long cook. The biscuits can be made while the noodles simmer, and any leftovers store well in an airtight container for the next day. If the broth tastes too mild, a small pinch of extra salt stirred in at the end brings out the flavor without changing the simple profile.

    • Cover and cook on low for 6 hours or until the chicken reaches an internal temperature of 165 degrees.
    • About 45 minutes before the chicken is done, preheat the oven to 425 degrees. Toss the halved baby potatoes with olive oil, salt, pepper, and paprika in a large bowl.

    • 1 cup mild salsa
    • 1.5 cups frozen corn kernels
    • 8 medium flour tortillas

    Instructions

    • Add the chicken breasts, mild salsa, and frozen corn to the slow cooker. Stir once to combine the salsa and corn, then cover and cook on low for 6 hours.
    • Remove the chicken breasts and shred them with two forks. Return the shredded chicken to the slow cooker and stir it into the salsa and corn mixture until evenly coated.
    • Heat 1 tablespoon of butter in a large skillet over medium heat. Place one tortilla in the skillet, sprinkle 1/4 cup cheese over half of it, then top with about 1/2 cup of the chicken mixture and another 1/4 cup cheese.
    • Fold the tortilla in half and cook for 2 to 3 minutes until the bottom is golden. Flip and cook the other side until golden and the cheese melts. Repeat with the remaining butter, tortillas, cheese, and chicken mixture.

    Notes

The corn stays slightly firm after slow cooking, which gives the quesadillas a pleasant pop of texture against the soft chicken. If the filling seems a little wet after shredding, let it sit uncovered in the slow cooker on warm for 15 minutes before assembling.
