- While the stew cooks, bring a separate pot of water to a boil and cook the rice noodles according to package directions. Drain and set aside.
- Quick-release the pressure once the cook time ends. Remove and discard the lemongrass pieces.
- Divide the cooked rice noodles among four bowls. Ladle the lamb stew over the noodles. Top each bowl with chopped cilantro and serve with lime wedges on the side.
