Winter stews make a reliable choice for filling dinners when it gets cold outside. I focused on versions that skip wine but still build good flavor with basic ingredients. You will find 15 practical recipes here that work for regular weeknight cooking. Each one uses steps and items most people already have on hand. They should give you solid options to try without extra effort or special purchases.
Helpful Tips Before You Start
These tips help create rich stews without relying on wine for depth.
Sear the meat thoroughly
Brown chunks of beef or pork in batches over medium high heat. This step builds a strong base flavor that carries through the whole pot.
Boost umami with pantry staples
Add a tablespoon of tomato paste or a few dried mushrooms when you cook the onions. Both give the stew a savory backbone that replaces wine notes.
Choose the right thickener
Mash a few potatoes or beans into the broth near the end of cooking. This creates body without needing alcohol reductions.
Taste and adjust acidity last
Stir in a teaspoon of balsamic vinegar or lemon juice right before serving. A little acid brightens the flavors that developed during the long simmer.
