Lentil soup makes a filling meal when you want something healthy from items already in your pantry. These recipes use basic dried lentils along with common add ins like carrots or spices you likely have. I collected 12 different rustic versions that are easy to put together on a weeknight. Each one stays simple and focuses on real ingredients without extra steps. You can swap in what you have on hand to make them your own.

    Helpful Tips Before You Start

These tips will help you turn basic pantry items into hearty lentil soups.

    Rinse the Lentils First

Rinse lentils in a fine mesh strainer under cold water. This removes dust and any small stones that sometimes slip through.

    Match Lentil Type to Texture

Use brown or green lentils when you want them to hold their shape. Choose red lentils if you prefer a thicker, softer soup.

    Build Flavor with Dried Herbs

Add dried thyme, oregano, or cumin at the start of cooking. These pantry staples give rustic depth without needing fresh ingredients.

Simmer Until Tender but Not Mushy

Check lentils at the 25 minute mark and stir gently. Overcooking turns them to mush and changes the rustic texture.

    Taste Before Serving

Add salt, pepper, or a splash of vinegar at the end. Lentils absorb seasoning slowly so final adjustments make a big difference.

Tuscan-Style Lentil Soup with Kale and Tomatoes

This soup turns basic pantry items into a filling meal with earthy lentils, bright tomatoes, and sturdy kale. It works well on busy weeknights when you need something warm and nourishing without a long shopping list. The result is a thick, savory broth with tender vegetables and a light herbal note.

It also makes a good option for meal prep because the flavors hold up after a day or two in the fridge. The kale softens just enough to blend into the soup while still giving some texture.

    Equipment

    • Large Pot
    • Wooden Spoon
    • Knife
    • Cutting Board

    Ingredients

    • 2 tablespoons olive oil
    • 1 medium onion, diced
    • 3 garlic cloves, minced
    • 1 cup dried brown lentils, rinsed
    • 1 can (14 ounces) diced tomatoes
    • 4 cups vegetable broth
    • 1 teaspoon dried oregano
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 4 cups chopped kale leaves

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 5 minutes until it softens.
    • Stir in the minced garlic and cook for 1 minute until fragrant.
    • Add the rinsed lentils, diced tomatoes with their juice, vegetable broth, dried oregano, salt, and black pepper. Bring the mixture to a boil.
    • Reduce the heat to low, cover the pot, and simmer for 25 minutes until the lentils are tender.
    • Stir in the chopped kale and cook uncovered for 5 more minutes until the kale wilts.

    Notes

If the soup thickens too much after sitting, add a splash of broth or water when reheating. Kale can be swapped for spinach if that is what you have on hand, but add it in the last two minutes so it does not overcook. Leftovers keep in the fridge for up to four days and taste even better the next day.

Moroccan Spiced Lentil Soup with Chickpeas and Cinnamon

This soup brings warm Moroccan spices to a simple lentil base. Cinnamon adds a subtle sweetness that pairs well with earthy lentils and hearty chickpeas. It works well for weeknight dinners or meal prep because everything comes from pantry items and cooks in one pot.

The result is a thick, comforting soup with layers of spice and a slight tang from tomatoes. Chickpeas give it extra body while the lentils break down just enough to create a rustic texture.

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the onion and cook until it softens, about 5 minutes.
    • Stir in the garlic and cook for 1 minute until fragrant.

    • 2 bay leaves
    • 6 cups vegetable broth
    • Juice of 1 lemon
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it softens, about 5 minutes.
    • Stir in the minced garlic and cook for 1 minute until fragrant.
    • Add the rinsed lentils, dried oregano, bay leaves, and vegetable broth to the pot. Bring the mixture to a boil.

    • Remove the bay leaves. Stir in the lemon juice, then season with salt and black pepper to taste. Serve warm.

    Notes

Add the lemon juice only after the lentils finish cooking so the bright flavor stays sharp. If the soup thickens too much while sitting, stir in a splash of broth when reheating. Dried oregano works best here since it releases flavor steadily during the simmer.

    • 1 cup dried brown lentils, rinsed
    • 1 can (14 oz) diced tomatoes
    • 4 cups vegetable broth
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and ginger and cook for 4 minutes until the onion softens.
    • Stir in the ground coriander and curry powder and cook for 1 minute until the spices smell fragrant.

    • Season with salt and black pepper to taste before serving.

    Notes

    Notes

    • 1 teaspoon dried rosemary

    • 4 cups water
    • Salt and black pepper to taste
    • Extra olive oil for serving

    Instructions

    • Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the onion and carrots and cook for 5 minutes until the onion turns soft.

    Notes

    • 1 tablespoon olive oil
    • 1 large onion, chopped
    • 3 carrots, diced
    • 2 potatoes, diced
    • 2 cloves garlic, minced
    • 1 cup green lentils
    • ½ cup pearl barley
    • 6 cups vegetable broth
    • 1 teaspoon dried thyme
    • 2 bay leaves
    • Salt and pepper, to taste
    • 2 tablespoons chopped fresh parsley, for serving

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the onion and cook until it starts to soften.
    • Stir in the carrots, potatoes, and garlic. Cook for 3 minutes, stirring now and then.
    • Add the lentils, barley, vegetable broth, thyme, and bay leaves. Bring the mixture to a boil.

    • Remove the bay leaves. Taste the soup and season with salt and pepper as needed.
    • Ladle into bowls and top each serving with fresh parsley.

    Notes

If the soup thickens too much while it sits, add a splash of broth or water when reheating. The barley continues to absorb liquid, so check the texture before serving leftovers. Dried rosemary can replace the thyme if that is what you have on hand.
