Beef Barley Stew with Rich Mushroom Gravy
Course Soup
Cuisine American
Servings 4 people

Equipment

  • Dutch oven
  • cutting board
  • knife

Ingredients

  • 1 pound beef stew meat, cut into 1-inch cubes
  • ¾ cup pearl barley
  • 8 ounces cremini mushrooms, sliced
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 3 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  • Heat the olive oil in a Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides, about 5 minutes total. Remove the beef to a plate and set aside.
  • Lower the heat to medium. Add the onion, carrots, celery, and garlic to the pot. Cook for 4 minutes until the onion softens.
  • Stir in the flour and cook for 1 minute. Add the mushrooms and cook for 3 minutes until they release some liquid.
  • Pour in the beef broth while scraping the bottom of the pot. Return the beef to the pot along with the thyme, salt, and pepper. Bring the mixture to a simmer.
  • Stir in the pearl barley. Cover and cook on low heat for 50 minutes, stirring once or twice, until the beef is tender and the barley is cooked through.

Notes

If the stew thickens too much while simmering, add a splash of extra broth to reach your preferred consistency. Leftovers keep well in the fridge for three days and reheat smoothly on the stovetop with a little added liquid. Skip the thyme if you prefer a milder herb flavor.
