Beef stew with mushroom gravy works well for weeknight dinners or weekend meals. I collected 14 versions that stick to basic ingredients and standard cooking steps. Some use a slow cooker while others stay on the stovetop. You will see options with different vegetables or seasonings based on what you might already have. These recipes give straightforward ideas to try without extra fuss.

    Helpful Tips Before You Start

These tips will help you build deep flavor and a thick mushroom gravy in your beef stew.

    Sear the Beef in Batches

Brown the meat well on all sides before adding liquid. This step creates the base flavor that carries through the gravy.

    Brown the Mushrooms Separately

Cook sliced cremini or portobello mushrooms in a hot pan until golden. Adding them raw can make the gravy watery and dull.

Use a Mix of Broth and Wine

Replace part of the beef stock with dry red wine when deglazing the pan. The wine adds acidity that balances the rich mushroom taste.

    Thicken Toward the End

Stir in a flour or cornstarch slurry in the last 30 minutes of cooking. This keeps the gravy glossy instead of pasty.

Classic Dutch Oven Beef Stew with Rich Mushroom Gravy

This Dutch oven version builds deep flavor by searing the beef first and letting mushrooms cook down into the gravy base. The result is a hearty stew with tender meat and a thick, earthy sauce that clings to every bite. It suits chilly evenings when you want something filling that mostly cooks on its own.

The method keeps the mushroom taste front and center while the oven does the slow work of softening the beef. Carrots and onions add subtle sweetness that balances the savory gravy without overpowering it.

    Equipment

    • Dutch Oven
    • Cutting Board
    • Knife

    Ingredients

    • 1.5 pounds beef chuck, cut into 1-inch cubes
    • 8 ounces cremini mushrooms, sliced
    • 1 large onion, diced
    • 2 medium carrots, sliced into rounds
    • 3 cloves garlic, minced
    • 4 cups beef broth
    • 2 tablespoons tomato paste
    • 2 tablespoons all-purpose flour
    • 2 tablespoons olive oil
    • 1 tablespoon Worcestershire sauce
    • 2 bay leaves
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions

    • Preheat the oven to 325°F. Pat the beef dry and season it with salt and pepper.
    • Heat the olive oil in a Dutch oven over medium-high heat. Sear the beef in batches until browned on all sides, then set it aside.
    • Lower the heat to medium. Add the mushrooms and onion to the pot. Cook until the mushrooms release their liquid and start to brown.
    • Stir in the garlic and carrots. Cook for 2 minutes. Sprinkle the flour over the vegetables and stir for 1 minute to remove the raw taste.
    • Add the tomato paste and Worcestershire sauce. Pour in the beef broth while scraping the bottom of the pot.
    • Return the beef to the pot along with the bay leaves and thyme. Bring the mixture to a simmer.
    • Cover the Dutch oven and transfer it to the oven. Cook for 2 hours until the beef is fork-tender.
    • Remove the bay leaves before serving. Taste and adjust salt or pepper if needed.

    Notes

For a thicker gravy, mash a few carrot pieces against the side of the pot after cooking. Leftovers taste even better the next day, so make this on a weekend and reheat gently on the stove with a splash of broth to loosen the sauce.

    Ingredients

    • 1.5 pounds beef stew meat, cut into 1-inch pieces
    • 8 ounces mushrooms, sliced
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 2 cups beef broth
    • 2 tablespoons olive oil
    • 2 tablespoons all-purpose flour
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 8 ounces egg noodles
    • 2 tablespoons chopped fresh parsley

    Instructions

    • Set the Instant Pot to sauté mode and heat the olive oil. Add the beef stew meat and brown it on all sides for about 5 minutes.
    • Add the diced onion, minced garlic, and sliced mushrooms. Cook for 3 minutes until the onion softens.
    • Sprinkle in the flour, thyme, salt, and pepper. Stir to coat the meat and vegetables.
    • Pour in the beef broth and stir well, scraping the bottom of the pot. Cancel sauté mode, secure the lid, and cook on high pressure for 35 minutes.
    • Allow a natural pressure release for 10 minutes, then quick release any remaining pressure.
    • While the stew cooks, bring a large pot of salted water to a boil and cook the egg noodles according to package directions. Drain them.
    • Open the Instant Pot and stir the stew. If the gravy needs more thickness, switch back to sauté mode for 2 to 3 minutes.
    • Divide the cooked egg noodles among four bowls and ladle the beef stew and mushroom gravy over the top. Sprinkle with chopped fresh parsley before serving.

    Notes

Cook the egg noodles just until al dente so they stay firm under the thick gravy. If the gravy seems too thin after pressure cooking, simmer it briefly on sauté mode while stirring. Leftovers keep well in the refrigerator for three days and reheat gently on the stovetop with a splash of broth to loosen the sauce.

    • 1½ pounds beef chuck roast, cut into 1-inch cubes
    • 12 ounces Irish stout beer
    • 8 ounces cremini mushrooms, quartered
    • 1 pound Yukon Gold potatoes, quartered
    • 1 large yellow onion, chopped
    • 3 garlic cloves, minced
    • ¼ cup all-purpose flour

    • 2 tablespoons olive oil
    • 1 teaspoon dried thyme
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a Dutch oven over medium-high heat. Season the beef cubes with salt and pepper, then brown them in batches until all sides are seared. Remove the beef and set it aside.
    • Add the onion and garlic to the same pot. Cook for 3 minutes until the onion softens. Stir in the mushrooms and cook another 4 minutes until they release liquid and start to brown.
    • Sprinkle the flour over the vegetables and stir for 1 minute to coat everything. Slowly pour in the Irish stout while scraping the bottom of the pot to loosen any browned bits.
    • Add the beef broth and thyme. Return the browned beef to the pot and bring the mixture to a simmer. Cover and cook for 1 hour, stirring once halfway through.
    • Add the potatoes, cover again, and simmer for 45 more minutes until the beef is fork-tender and the potatoes are cooked through. Taste and adjust salt and pepper if needed before serving.

    Notes

If the gravy seems too thick after the potatoes finish cooking, stir in a splash of extra broth. Leftovers reheat well on the stovetop with a little water added to loosen the sauce. For a stronger mushroom flavor, swap half the cremini mushrooms for portobello caps.

    • 1.5 pounds beef stew meat, cut into 1-inch cubes
    • 8 ounces cremini mushrooms, sliced
    • 1 large onion, chopped
    • 2 carrots, peeled and sliced
    • 2 celery ribs, sliced
    • 3 garlic cloves, minced
    • 4 cups beef broth
    • 3 tablespoons all-purpose flour
    • 2 tablespoons olive oil
    • 2 tablespoons butter, softened
    • 1 teaspoon dried thyme
    • 1 teaspoon dried rosemary
    • 2 tablespoons fresh parsley, chopped
    • 4 sourdough bread bowls
    • Salt and black pepper to taste

    Instructions

    • Pat the beef dry and season it with salt, pepper, thyme, and rosemary. Heat the olive oil in a Dutch oven over medium-high heat and brown the beef in batches until all sides are seared. Remove the beef and set it aside.
    • Lower the heat to medium and add the onion, carrots, celery, and garlic to the pot. Cook for 5 minutes until the vegetables soften slightly.
    • Stir in the mushrooms and cook 3 more minutes. Sprinkle the flour over the vegetables and stir for 1 minute to coat everything evenly.
    • Slowly pour in the beef broth while stirring to avoid lumps. Return the beef to the pot, bring the mixture to a simmer, and cook uncovered for 90 minutes until the beef is fork-tender and the gravy has thickened.
    • While the stew simmers, heat the oven to 375°F. Slice the tops off the bread bowls and hollow out the centers. Mix the softened butter with the remaining rosemary and thyme, then brush the mixture inside and on the rims of the bread bowls.
    • Place the prepared bread bowls on a baking sheet and bake for 10 minutes until the edges are golden and crisp. Ladle the hot stew into the toasted bowls and sprinkle with fresh parsley before serving.

    Notes

Brush the bread bowls a second time with any leftover herb butter right after baking to deepen the crust flavor. If the gravy thickens too much during simmering, add a splash of broth to loosen it. Leftovers reheat best on the stovetop with a little extra broth stirred in to restore the original consistency.

    • 4 garlic cloves, minced
    • 2 tablespoons fresh thyme leaves

    • 2 tablespoons butter
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper

    Instructions

    • Pat the beef cubes dry and season them with salt and pepper. Melt the butter in a large pot over medium heat and brown the beef in batches until all sides are seared. Remove the beef and set it aside.
    • Add the onion and carrots to the same pot. Cook for 5 minutes until the onion softens. Stir in the minced garlic and thyme leaves and cook for 1 minute more.
    • Add the sliced mushrooms and cook until they release their liquid and start to brown. Sprinkle the flour over the vegetables and stir for 2 minutes to form a roux.
    • Slowly pour in the beef broth while stirring to avoid lumps. Return the browned beef to the pot and bring the mixture to a simmer.
    • Cover the pot and cook on low heat for 1 hour and 45 minutes, stirring occasionally, until the beef is fork-tender and the gravy has thickened.

    Notes

If the gravy thickens too much during cooking, add a splash of extra broth. Leftovers taste even better the next day after the flavors have settled. Reheat gently on the stove with a little broth to loosen the sauce. Fresh thyme works best here because dried thyme can turn bitter with long simmering.

    • Bring the mixture to a simmer, cover, and cook on low heat for one hour. Add the carrots and mushrooms, then continue simmering uncovered for another 45 minutes until the beef is tender and the gravy has thickened.
    • Remove the bay leaf, taste and adjust salt and pepper if needed. Sprinkle with fresh parsley just before serving.

    Notes

Use a dry red wine you would drink, as it gives the gravy its depth. If the gravy thickens too much during simmering, add a splash of broth to loosen it. Leftovers reheat well on the stovetop with a little extra broth stirred in.

    Equipment

    • Dutch Oven
    • Large Pot
    • Potato Masher

    Ingredients

    • 1.5 lbs beef stew meat, cut into 1-inch cubes
    • 8 oz cremini mushrooms, sliced
    • 1 large onion, diced
    • 2 carrots, sliced into rounds
    • 3 garlic cloves, minced
    • 3 cups beef broth
    • 2 tbsp all-purpose flour
    • 2 tbsp olive oil
    • 1 tsp dried thyme
    • 1.5 tsp salt, divided
    • 1/2 tsp black pepper
    • 2 lbs Yukon gold potatoes, peeled and quartered
    • 4 tbsp butter
    • 1/2 cup whole milk
    • 2 tbsp chopped fresh parsley

    Instructions

    • Heat the olive oil in a Dutch oven over medium-high heat. Add the beef cubes, season with 1 teaspoon salt and the black pepper, and brown on all sides for about 6 minutes. Remove the beef to a plate.
    • Add the mushrooms and onion to the same pot. Cook until the mushrooms release their liquid and start to brown, about 5 minutes. Stir in the garlic and carrots and cook for 2 more minutes.
    • Sprinkle the flour over the vegetables and stir for 1 minute. Slowly pour in the beef broth while scraping the bottom of the pot. Add the thyme and return the beef to the pot.
    • Bring the stew to a simmer, then lower the heat, cover, and cook for 1 hour and 15 minutes until the beef is tender and the gravy has thickened.
    • While the stew simmers, place the potatoes in a large pot, cover with water, and add the remaining 1/2 teaspoon salt. Boil until the potatoes are fork-tender, about 15 minutes. Drain well.
    • Return the potatoes to the pot. Add the butter and milk, then mash until smooth. Season with additional salt if needed.
    • Spoon the mashed potatoes into bowls and ladle the beef stew with mushroom gravy on top. Sprinkle with fresh parsley before serving.

    Notes

If the gravy seems too thin after simmering, remove the lid for the last 10 minutes to let it reduce. Leftovers reheat well on the stove with a splash of broth to loosen the sauce. You can make the stew a day ahead since the flavors deepen overnight, but mash the potatoes fresh when you plan to serve.

    Equipment

    • Dutch Oven
    • Cutting Board
    • Knife

    Ingredients

    • 1.5 pounds beef chuck, cut into 1-inch cubes
    • 8 ounces cremini mushrooms, sliced
    • 3 cups butternut squash, peeled and cut into 1-inch cubes
    • 1 large onion, diced
    • 3 garlic cloves, minced
    • 3 cups beef broth
    • 2 tablespoons all-purpose flour
    • 2 tablespoons olive oil
    • 1 teaspoon ground cumin
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon paprika
    • 2 bay leaves
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a Dutch oven over medium-high heat. Add the beef cubes and brown them on all sides, then remove the beef and set it aside.
    • Add the onion and garlic to the same pot. Cook until the onion softens.
    • Stir in the flour, cumin, cinnamon, and paprika. Cook for one minute to remove the raw flour taste.
    • Return the beef to the pot. Pour in the beef broth and add the bay leaves. Bring the mixture to a simmer.
    • Add the sliced mushrooms and butternut squash. Season with salt and black pepper. Cover and simmer gently for about 90 minutes, stirring occasionally, until the beef is tender and the gravy has thickened.

    Notes

Simmer the stew uncovered for the final 15 minutes if the gravy needs more thickness. The butternut squash releases natural sweetness that balances the spices, so taste before adding extra salt. Leftovers keep well in the fridge for three days and reheat smoothly on the stovetop with a splash of broth to loosen the gravy.

    Notes
