Creepy Crawly Garlic Butter Shrimp Stir-Fry

Ingredients
  

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons butter
  • 5 garlic cloves, minced
  • 3 cups broccoli florets
  • 1 cup sliced mushrooms
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon red pepper flakes
  • 2 green onions, sliced
  • Cooked rice, for serving

Instructions
 

  • Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the minced garlic and cook for 30 seconds until fragrant.
  • Add the broccoli florets and sliced mushrooms to the skillet. Stir and cook for 4 minutes until the vegetables start to soften.
  • Push the vegetables to the side of the skillet. Add the shrimp in a single layer and cook for 2 minutes per side until pink and opaque.
  • Stir in the soy sauce, honey, and red pepper flakes. Add the remaining tablespoon of butter and toss everything together for 1 minute until the sauce coats the shrimp and vegetables.
  • Remove the skillet from the heat. Sprinkle the sliced green onions over the top and serve the stir-fry over cooked rice.

Notes

Use fresh or thawed shrimp and pat them dry before cooking so they sear instead of steaming. Leftovers keep in the fridge for up to two days and reheat well in a skillet with a splash of water to loosen the sauce. If you want less heat, reduce the red pepper flakes to half a teaspoon.
