Frankenstein Avocado Chocolate Brownies

Ingredients
  

  • 2 ripe avocados
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1/4 cup almond flour
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ounces dark chocolate
  • 12 candy eyes

Instructions
 

  • Preheat the oven to 350 degrees and line a small baking pan with parchment paper.
  • Scoop the avocado flesh into a mixing bowl and mash it until smooth with a fork.
  • Add the cocoa powder, maple syrup, eggs, almond flour, vanilla extract, baking soda, and salt to the bowl.
  • Stir everything until a thick batter forms and no large lumps remain.
  • Spread the batter evenly in the prepared pan.
  • Bake for 18 to 20 minutes until the center feels firm to the touch.
  • Let the brownies cool completely in the pan.
  • Melt the dark chocolate in a small bowl in the microwave using short bursts.
  • Drizzle or pipe the melted chocolate over the brownies to form hair and neck bolts.
  • Press candy eyes onto each brownie to finish the faces.

Notes

Mash the avocado very well before adding other ingredients so the brownies stay smooth. Use a zip-top bag with one corner snipped to pipe the melted chocolate if you want neat lines. Store leftovers in an airtight container at room temperature for up to two days.
