Frankenstein Brownie Cake Pops

Ingredients
  

  • 8 ounces baked brownies, cooled and crumbled
  • 2 tablespoons cream cheese, softened
  • 1 cup green candy melts
  • 4 popsicle sticks
  • 8 candy eyes
  • Black decorating icing

Instructions
 

  • Place the crumbled brownies and cream cheese in a mixing bowl. Stir until the mixture holds together like dough.
  • Divide the mixture into four equal portions and roll each into a compact ball or oval shape.
  • Push one popsicle stick into the bottom of each brownie ball. Place the pops on a baking sheet and chill for 15 minutes to firm up.
  • Melt the green candy melts in a microwave-safe bowl in 30-second bursts, stirring between each until smooth.
  • Dip each brownie pop into the melted candy melts, letting excess drip off. Return the pops to the baking sheet.
  • Press two candy eyes onto the front of each pop while the coating is still soft. Use the black icing to draw hair across the top and short lines for stitches on the sides. Let the pops set at room temperature until the coating hardens.

Notes

Chill the pops again after decorating if the icing starts to soften. Store any leftovers in an airtight container in the fridge for up to two days. The black icing lines show up best on the green coating when applied in thin strokes rather than thick ones.
