Ginger-Soy Hamburger and Cabbage Asian-Inspired Stew
Large pot
Wooden spoon
Knife
Cutting board
- 1 pound ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tablespoons grated fresh ginger
- 1 tablespoon sesame oil
- 4 cups beef broth
- 1/4 cup soy sauce
- 2 carrots, peeled and sliced
- 1 small head green cabbage, chopped (about 6 cups)
- Salt and pepper to taste
- 2 green onions, sliced
Heat the sesame oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
Stir in the onion, garlic, and ginger. Cook for 2 minutes until the onion softens.
Pour in the beef broth and soy sauce. Add the carrots and bring the mixture to a simmer.
Stir in the chopped cabbage. Cover the pot and let it cook for 15 minutes, stirring once or twice, until the cabbage is tender.
Taste and add salt and pepper as needed. Ladle into bowls and top with the sliced green onions.
If the broth tastes too strong, add a splash more water or broth after the cabbage cooks down. Leftovers reheat well on the stove with a little extra liquid to loosen the cabbage. For a heartier bowl, serve over a small scoop of cooked rice.
