Hamburger stew makes a filling dinner that comes together with basic ingredients. These one pot versions cut down on dishes and work well for weeknight meals. I gathered 11 different recipes that vary the flavors while keeping the method straightforward. Most use ground beef and vegetables you probably already have on hand. They should give you some practical options to rotate through your meal plan.

Helpful Tips for One-Pot Hamburger Stews

These tips will help you cook the stews smoothly and get good flavor in every batch.

    Brown the Beef Well

Cook the ground beef in the empty pot first until it develops browned bits on the bottom. Those bits add depth once you add the liquid and vegetables.

    Cut Vegetables Evenly

Chop potatoes, carrots, and other root vegetables into similar sized pieces. This keeps them tender at the same time without some turning mushy.

    Use Enough Liquid

Start with the amount of broth or stock listed, then check halfway through simmering. Add a splash more if the stew looks too thick for your taste.

    Stir Gently After Adding Potatoes

Once potatoes go in, stir only a few times. Too much stirring can break them apart and make the stew gluey.

    Let It Rest Before Serving

Turn off the heat and let the pot sit covered for 10 minutes. The flavors settle and the stew thickens slightly on its own.

    Classic One-Pot Hamburger Vegetable Stew

This one-pot stew combines ground beef with carrots, potatoes, and peas in a simple tomato broth. It comes together in a single pot and delivers a thick, savory result that feels filling without extra steps. The dish suits weeknight dinners or casual family meals when you want something warm and straightforward.

It works well on cooler evenings or when you need to use up basic vegetables. The texture stays hearty from the potatoes and beef, while the broth keeps everything balanced and easy to eat with a spoon.

    Equipment

    • Large pot
    • Wooden spoon
    • Knife
    • Cutting board

    Ingredients

    • 1 lb ground beef
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 3 carrots, sliced
    • 2 medium potatoes, cubed
    • 1 can (14.5 oz) diced tomatoes
    • 4 cups beef broth
    • 1 cup frozen peas
    • 1 tsp dried thyme
    • Salt and pepper to taste

    Instructions

    • Heat a large pot over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion and minced garlic to the pot. Stir and cook for 3 minutes until the onion softens.
    • Add the sliced carrots, cubed potatoes, diced tomatoes, beef broth, and dried thyme. Stir to combine.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25 minutes until the potatoes and carrots are tender.
    • Stir in the frozen peas and cook for 5 more minutes. Season with salt and pepper to taste before serving.

    Notes

Simmer the stew uncovered for the last 10 minutes if you prefer a thicker broth. Leftovers reheat well on the stove with a splash of broth to loosen the texture. Skip the peas if you want a simpler vegetable mix, or add them right at the end so they stay bright.

Hearty Hamburger Barley and Mushroom Stew

This stew combines ground beef with chewy barley and earthy mushrooms for a filling meal that holds up well on cold evenings. It works especially well for weeknight dinners when you want something hearty without multiple pots or long prep. The barley gives it a pleasant bite while the mushrooms add depth to the broth.

The flavors stay savory and balanced, with the beef providing richness that pairs naturally with the vegetables and herbs. Everything simmers together in one pot until the barley is tender and the stew thickens slightly.

    • Large pot
    • Wooden spoon
    • Knife
    • Cutting board

    Ingredients

    • 1 pound ground beef
    • 8 ounces mushrooms, sliced
    • 1 medium onion, diced
    • 2 carrots, diced
    • 2 cloves garlic, minced
    • 1/2 cup pearl barley
    • 4 cups beef broth
    • 2 tablespoons tomato paste
    • 2 tablespoons olive oil
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons fresh parsley, chopped

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Stir in the onion, carrots, and mushrooms. Cook for 5 minutes until the vegetables begin to soften.
    • Add the garlic and cook for 1 minute until fragrant.
    • Mix in the tomato paste, thyme, salt, and pepper. Stir to coat the meat and vegetables evenly.
    • Pour in the beef broth and add the pearl barley. Bring the mixture to a boil.
    • Reduce the heat to low, cover the pot, and simmer for 40 minutes until the barley is tender.
    • Stir in the fresh parsley just before serving.

    Notes

If the stew thickens too much while simmering, add a splash of extra broth to reach your preferred consistency. Leftovers store well in the fridge for up to three days and reheat easily on the stove with a little added water. For a deeper mushroom flavor, use a mix of cremini and white button mushrooms.

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 2 chipotle peppers in adobo sauce, finely chopped
    • 1 teaspoon ground cumin
    • 1 teaspoon smoked paprika
    • 1 (15-ounce) can black beans, drained and rinsed
    • 1 (14.5-ounce) can diced tomatoes
    • 2 cups beef broth
    • Salt and black pepper to taste
    • Fresh cilantro, chopped (for garnish)
    • Lime wedges (for serving)

    Instructions

    • Heat a large pot over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
    • Add the diced onion and minced garlic to the pot. Cook for 3 to 4 minutes until the onion softens.
    • Stir in the chopped chipotle peppers, cumin, and smoked paprika. Cook for 1 minute to release the spices.
    • Add the black beans, diced tomatoes, and beef broth. Stir to combine and season with salt and black pepper.
    • Bring the mixture to a simmer. Reduce heat to low, cover, and cook for 20 minutes, stirring occasionally.
    • Taste and adjust seasoning if necessary. Serve hot with chopped cilantro and lime wedges on the side.

    Notes

Chipotle peppers vary in heat, so start with one and add the second after tasting the broth. Leftovers thicken as they sit, so add a splash of broth when reheating. This stew pairs well with warm cornbread or rice to soak up the sauce.

Italian Herb Hamburger Tomato and White Bean Stew

This stew brings together ground beef, creamy white beans, and tomatoes in one pot for a filling meal that feels both familiar and a little different. It works well on weeknights when you need a quick, no-fuss dinner that still tastes like it simmered for hours. The Italian herbs add a savory depth while the beans give the broth a nice body without needing extra thickeners.

The result is a hearty bowl with tender vegetables and a tomato-rich broth that pairs easily with bread or a simple salad. It is the kind of recipe that reheats well and tastes even better the next day.

    Ingredients

    • 1 tablespoon olive oil
    • 1 pound ground beef
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 carrots, peeled and sliced
    • 1 teaspoon dried oregano
    • 1 teaspoon dried basil
    • 1/2 teaspoon dried rosemary
    • 1 can (15 ounces) white beans, drained and rinsed
    • 1 can (28 ounces) crushed tomatoes
    • 2 cups beef broth
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion, minced garlic, and sliced carrots to the pot. Cook for 5 minutes until the onion softens.
    • Stir in the oregano, basil, and rosemary. Cook for 1 minute until the herbs become fragrant.
    • Add the white beans, crushed tomatoes, and beef broth. Stir everything together and bring the mixture to a simmer.
    • Reduce the heat to low, cover the pot, and let it cook for 20 minutes. Season with salt and black pepper to taste before serving.

    Notes

Use crushed tomatoes instead of diced ones if you prefer a thicker broth that coats the beans and beef. Leftovers keep well in the fridge for three days and reheat smoothly on the stove with a splash of broth to loosen the texture. If the stew tastes too acidic after simmering, a pinch more salt usually balances the tomatoes without changing the Italian herb profile.

    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 tablespoons olive oil

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion, chopped bell peppers, and minced jalapeño to the pot. Stir and cook for 5 minutes until the vegetables soften.
    • Stir in the minced garlic, chili powder, cumin, salt, and black pepper. Cook for 1 minute until the spices become fragrant.
    • Pour in the beef broth, diced tomatoes, corn, and black beans. Stir everything together.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally.
    • Taste and adjust salt or pepper if needed before serving.

    Notes

For extra heat, leave the jalapeño seeds in during cooking. This stew thickens more as it sits, so add a splash of broth when reheating leftovers. Serve it with warm tortillas or over rice to stretch the portions.

    • 2 medium potatoes, cubed
    • 1 small head green cabbage, chopped
    • 4 cups beef broth
    • 1 teaspoon dried thyme
    • Salt and pepper to taste

    Instructions

    • Heat a large pot over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion and minced garlic to the pot. Stir and cook for 3 minutes until the onion softens.
    • Stir in the sliced carrots and cubed potatoes. Cook for 2 minutes to coat them with the beef juices.
    • Add the chopped cabbage, beef broth, and dried thyme. Season with salt and pepper.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 25 minutes until the vegetables are tender.

    Notes

Add the cabbage toward the end of the vegetable prep so it stays slightly crisp rather than turning mushy. If the broth tastes too light after simmering, remove the lid for the last 5 minutes to let some liquid evaporate. Leftovers keep well in the fridge for three days and reheat easily on the stovetop with a splash of extra broth.

This stew brings together ground beef, sweet potatoes, and green chiles for a one-pot meal that feels both filling and fresh. It works well on cool evenings when you want something hearty without a long list of steps. The sweet potatoes soften during cooking and give the broth a light body while the chiles add gentle heat.

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 large sweet potatoes, peeled and cut into 1-inch cubes
    • 1 (4-ounce) can diced green chiles
    • 1 teaspoon chili powder
    • 1 teaspoon ground cumin
    • 4 cups beef broth
    • Salt and black pepper to taste
    • Chopped fresh cilantro, for serving

    Instructions

    • Place a large pot over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Drain excess fat if needed.
    • Add the diced onion and minced garlic to the pot. Cook for 3 minutes until the onion softens.
    • Stir in the chili powder and ground cumin. Cook for 1 minute to toast the spices.
    • Add the sweet potato cubes, diced green chiles, and beef broth. Season with salt and black pepper.
    • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 to 25 minutes until the sweet potatoes are tender.
    • Taste and adjust seasoning if needed. Ladle into bowls and top with chopped cilantro before serving.

    Notes

The sweet potatoes release starch as they cook, so the stew thickens naturally without added flour. If the broth reduces too much, add a splash of water during the last 10 minutes of simmering. Leftovers keep well in the fridge for three days and reheat easily on the stove.

    • 1 teaspoon dried thyme
    • 1/2 teaspoon paprika
    • Salt and black pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion and minced garlic to the pot. Cook for 3 to 4 minutes until the onion softens.
    • Stir in the sliced carrots and cook for another 2 minutes.
    • Add the rinsed lentils, diced tomatoes, beef broth, dried thyme, and paprika. Stir to combine.
    • Season with salt and black pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 30 minutes until the lentils are tender.
    • Taste and adjust seasoning if needed before serving.

    Notes

If the stew thickens too much during simmering, add a splash of extra broth to loosen it. Brown lentils hold their shape better than red ones here, but either works if that is what you have on hand. Leftovers reheat well on the stovetop with a little added liquid.
