Paprika-Spiced Hamburger Potato and Pea Stew
Course Soup
Cuisine American
Large Pot
Wooden Spoon
Knife
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons paprika
- 4 cups beef broth
- 3 medium potatoes, peeled and cubed
- 1 cup frozen peas
- Salt and black pepper to taste
Heat the olive oil in a large pot over medium heat. Add the ground beef, onion, and garlic. Cook, breaking up the beef, until it is browned and the onion has softened.
Stir in the paprika and cook for about 1 minute until it becomes fragrant.
Add the beef broth and potatoes. Bring the mixture to a boil, then lower the heat and simmer for 20 minutes until the potatoes are tender.
Stir in the frozen peas and cook for 5 more minutes. Season with salt and black pepper before serving.
Add the peas only at the end so they keep their color and slight crunch. If you want a thicker broth, gently mash a few potato pieces against the side of the pot before adding the peas. Leftovers reheat well on the stove with a splash of broth to loosen the texture.
