Green Bean Casserole with Crispy Onions

- 1 pound fresh green beans, trimmed and cut into 2-inch pieces
- 1 (10.5-ounce) can cream of mushroom soup
- 1/2 cup milk
- 1 1/2 cups crispy fried onions, divided
- 1/4 teaspoon black pepper
Preheat the oven to 350°F. Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes until they are tender yet still crisp. Drain them well and set aside.
In a mixing bowl, combine the cream of mushroom soup, milk, and black pepper. Stir until smooth.
Add the drained green beans and 1 cup of the crispy fried onions to the bowl. Mix gently until the beans are evenly coated.
Spoon the mixture into a baking dish. Sprinkle the remaining 1/2 cup crispy fried onions evenly over the top.
Bake for 25 minutes until the casserole is hot and bubbling around the edges and the onions have turned golden.
Add the final layer of crispy onions only after the casserole has baked if you prepare it ahead of time. This keeps them from softening during storage. Leftovers reheat best in a 300°F oven for 10 minutes to restore some crunch without drying out the beans.
