Mummy Vanilla Cream Cheese Cake
Course Dessert
Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • Loaf Pan or Mini Cake Molds
  • Oven
  • Piping Bag

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 12 candy eyes

Instructions

  • Preheat the oven to 350 degrees and grease a small loaf pan or divide batter into four mini cake molds.
  • Whisk the flour, granulated sugar, and baking powder in a mixing bowl.
  • Add the softened butter, egg, milk, and 1 teaspoon vanilla extract. Stir until the batter is smooth.
  • Pour the batter into the prepared pan or molds and bake for 20 to 25 minutes until a toothpick comes out clean. Let the cakes cool completely.
  • Beat the cream cheese with the powdered sugar and remaining teaspoon of vanilla extract until the mixture is creamy and spreadable.
  • Spread a thin base layer of cream cheese frosting over each cooled cake.
  • Spoon the remaining frosting into a piping bag or zip-top bag with a small corner cut. Pipe short, overlapping strips across the cakes to create the mummy bandage effect.
  • Press two candy eyes onto each cake while the frosting is still soft.

Notes

Pipe the bandage strips in slightly uneven lines so they look wrapped rather than striped. If the cream cheese frosting feels too soft to hold clean lines, chill it for ten minutes before piping. Leftovers keep in the refrigerator for two days in an airtight container.
