Cuisine American
Servings 4 people

Equipment

  • Mixing Bowl
  • 6-inch Cake Pan
  • Oven
  • Cooling Rack

Ingredients

  • 1 cup pumpkin puree
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup cream cheese frosting
  • 2 round vanilla wafers
  • 4 brown chocolate chips

Instructions

  • Heat the oven to 350 degrees and grease a small 6-inch round cake pan.
  • In a mixing bowl stir together the flour, sugar, baking powder, and pumpkin pie spice.
  • Add the pumpkin puree, egg, and vegetable oil to the dry mixture and stir until smooth.
  • Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick comes out clean.
  • Let the cake cool in the pan for 10 minutes then move it to a rack to finish cooling.
  • Spread the cream cheese frosting evenly over the cooled cake.
  • Place the two vanilla wafers side by side near the top to form the owl eyes.
  • Press two chocolate chips into the center of each wafer to finish the eyes.

Notes

Use a small offset spatula to smooth the frosting so the wafers sit flat and look like wide owl eyes. If the cake is made ahead, store it in the fridge and bring it out 20 minutes before serving so the frosting softens. Swap the chocolate chips for candy-coated pieces if you want brighter color in the pupils.
