Pumpkin Spice Ghost Cookies

Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 tablespoon pumpkin pie spice
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 8 ounces white chocolate chips
  • 2 tablespoons mini chocolate chips

Instructions
 

  • Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  • Stir together the flour, pumpkin pie spice, and baking powder in a bowl.
  • Cream the butter and brown sugar until light, then mix in the egg yolk and vanilla.
  • Combine the wet and dry mixtures until a dough forms.
  • Scoop the dough into eight portions, shape each into a rounded ghost form, and place them on the baking sheet.
  • Bake for 10 to 12 minutes until the edges turn lightly golden, then let the cookies cool completely on a rack.
  • Melt the white chocolate chips in the microwave in short bursts, stirring until smooth.
  • Dip or spread the cooled cookies with the melted white chocolate to form the ghost shape, then press two mini chocolate chips into each as eyes.
  • Allow the chocolate to set before serving.

Notes

Chill the dough for 15 minutes if it feels too soft to shape. Use a fork to create subtle ridges in the white chocolate before it sets for a simple ghost texture. Store leftovers in an airtight container at room temperature for up to two days.
