Vampire Bite Caprese Skewers with Balsamic Drizzle
Course Appetizer
Cuisine Italian
Servings 4 people

Equipment

  • Wooden skewers
  • Small bowl

Ingredients

  • 20 cherry tomatoes
  • 20 bocconcini mozzarella balls
  • 20 fresh basil leaves
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 10 wooden skewers

Instructions

  • Thread one cherry tomato onto a skewer followed by a mozzarella ball and a basil leaf. Repeat the pattern once more so each skewer holds two of each item.
  • Place the finished skewers on a serving plate. Mix the balsamic vinegar with the olive oil in a small bowl. Add the salt and black pepper to the mixture and stir well.
  • Drizzle the balsamic mixture evenly over the skewers just before serving so the liquid coats the tomatoes and mozzarella.

Notes

Make the skewers up to two hours ahead and keep them covered in the fridge, then add the balsamic drizzle right before guests arrive to avoid sogginess. If you want a thicker coating, simmer the vinegar alone for a few minutes until it reduces slightly before mixing with the oil. Skip the oil if you prefer a sharper bite from the vinegar alone.
