Crockpot beef stew makes an easy option for weeknight dinners without extra steps in the kitchen. These recipes skip browning the meat so you can add the ingredients and let the slow cooker handle the rest. They use simple ingredients that most people keep on hand. The ideas below include different seasoning mixes and vegetable combinations to suit what your family likes. Each one focuses on minimal prep for a filling meal.

    Helpful Tips Before You Start

These tips will help your beef stew turn out tender and flavorful even without browning the meat first.

Pick a Good Cut of Beef

Chuck roast or pre-cut stew meat works best. The long cook time breaks down the connective tissue and keeps the pieces moist.

    Cut Vegetables in Even Pieces

Aim for similar sizes on carrots, potatoes, and onions. This helps everything finish cooking at the same time.

    Add Extra Flavor Boosters

Stir in Worcestershire sauce, tomato paste, or dried herbs with the broth. They replace some of the depth lost from skipping the sear.

    Keep the Lid On

Avoid lifting the lid during cooking. Each peek drops the temperature and can add extra time to the recipe.

    Thicken Near the End

Mix a cornstarch slurry and stir it in for the last hour if you want a thicker gravy.

Classic Homestyle Beef Stew with Potatoes and Carrots

This recipe brings together tender beef, soft potatoes, and sweet carrots in a simple broth that tastes like it simmered all day. It works well for weeknight dinners when you want a filling meal without extra steps or pans. The result is a straightforward stew with mild herbs and a comforting texture that holds up well as leftovers.

It fits busy schedules since everything goes straight into the crockpot. The potatoes and carrots release flavor into the broth while the beef becomes fork-tender. No searing means less cleanup and still delivers the classic taste most families expect.

    Equipment

    • Slow Cooker

    Ingredients

    • 1.5 pounds beef stew meat
    • 4 medium potatoes, peeled and cubed
    • 4 carrots, peeled and sliced
    • 1 large onion, diced
    • 3 cups beef broth
    • 2 tablespoons tomato paste
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 2 bay leaves
    • Salt and pepper to taste

    Instructions

    • Place the beef stew meat in the bottom of the slow cooker.
    • Add the cubed potatoes, sliced carrots, and diced onion on top of the meat.
    • In a small bowl, stir together the beef broth and tomato paste until smooth, then pour the mixture over the vegetables and meat.
    • Add the minced garlic, dried thyme, bay leaves, salt, and pepper.
    • Cover and cook on low for 8 hours until the beef is tender and the vegetables are soft.
    • Remove the bay leaves before serving.

    Notes

Stir the stew gently before serving so the tomato paste stays evenly mixed through the broth. Leftovers keep well in the fridge for three days and reheat nicely on the stove with a splash of extra broth if the potatoes have absorbed too much liquid. Use red potatoes if you want them to hold their shape better during the long cook.

Italian Herb Beef Stew with Tomatoes and White Beans

This stew combines tender beef with tomatoes and white beans in a simple herb broth. It comes together with almost no effort and delivers a hearty, rustic meal that feels special enough for company yet easy enough for weeknights. The tomatoes give a bright base while the beans add creaminess without any extra dairy.

The Italian seasoning infuses everything as it simmers slowly, creating layers of flavor from ingredients you likely have on hand. It is especially useful on days when you want to skip the stove entirely and still end up with a complete dinner.

    Ingredients

    • 1.5 pounds beef stew meat
    • 1 large onion, diced
    • 3 carrots, peeled and sliced
    • 4 garlic cloves, minced
    • 2 (14.5 oz) cans diced tomatoes
    • 2 (15 oz) cans white beans, drained and rinsed
    • 3 cups beef broth
    • 2 tablespoons Italian seasoning
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper

    Instructions

    • Place the beef stew meat in the bottom of the slow cooker.
    • Add the diced onion, sliced carrots, and minced garlic on top of the meat.
    • Pour both cans of diced tomatoes and the beef broth over the vegetables.

    • Stir everything gently to distribute the seasonings.
    • Cover and cook on low for 8 hours until the beef is fork-tender.
    • Stir in the drained white beans during the last 30 minutes of cooking so they warm through without breaking apart.

    Notes

Stir the beans in only at the end to keep their shape and give the stew a pleasant creamy texture from the soft centers. If the broth tastes too mild after cooking, add an extra pinch of Italian seasoning before serving. Leftovers thicken nicely overnight in the fridge and reheat well on the stovetop with a splash of broth.

    • 4 cups beef broth
    • 1 can (14 oz) diced tomatoes
    • 1 teaspoon cumin
    • Salt and pepper to taste
    • Fresh cilantro, chopped, for garnish

    Instructions

    • Place the beef stew meat in the slow cooker. Add the chopped chipotle peppers, frozen corn, diced red bell peppers, diced onion, and minced garlic.

    Ingredients

    • 1 1/2 pounds beef stew meat
    • 1/4 cup low-sodium soy sauce
    • 3 tablespoons grated fresh ginger
    • 4 garlic cloves, minced
    • 1 large onion, diced
    • 3 carrots, peeled and sliced
    • 4 cups beef broth
    • 1 tablespoon brown sugar
    • 2 heads bok choy, roughly chopped
    • 2 tablespoons cornstarch mixed with 2 tablespoons water
    • Cooked rice for serving

    Instructions

    • Add the beef stew meat to the slow cooker.
    • Pour in the soy sauce, then add the ginger, garlic, onion, carrots, beef broth, and brown sugar.
    • Stir everything together to coat the meat and vegetables.
    • Cover and cook on low for 8 hours until the beef is tender.
    • In the final 30 minutes of cooking, stir in the bok choy.
    • Mix the cornstarch slurry into the stew and stir until it thickens slightly.
    • Serve the stew over cooked rice.

    Notes

Add the bok choy only in the last half hour so it keeps some texture instead of becoming overly soft. If the broth tastes too mild after cooking, stir in an extra splash of soy sauce before serving. Leftovers store well in the fridge for up to three days and reheat easily on the stovetop with a little added broth if needed.

This stew combines the deep malt flavor of Guinness with tender beef, earthy mushrooms, and sweet pearl onions. It makes a solid choice for busy weeknights when you want a filling meal with little hands-on work.

    • 8 ounces cremini mushrooms, sliced
    • 1 cup pearl onions
    • 3 carrots, chopped
    • 2 medium potatoes, cubed
    • 12 ounces Guinness stout
    • 2 cups beef broth
    • 2 tablespoons tomato paste
    • 2 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 bay leaves

    Instructions

    • Add the beef stew meat to the slow cooker first.
    • Layer the sliced mushrooms, pearl onions, chopped carrots, and cubed potatoes over the beef.
    • In a mixing bowl, whisk together the Guinness, beef broth, tomato paste, minced garlic, dried thyme, salt, and black pepper until smooth.

    • Place the bay leaves on top.
    • Cover and cook on low for 8 hours.
    • Remove the bay leaves before serving.

    Notes

The Guinness creates a slightly bitter, roasted note that balances the sweetness of the pearl onions. If the broth needs more body after cooking, mash a few potato cubes against the side of the pot and stir them in. Leftovers keep well in the fridge for three days and reheat easily on the stovetop with a splash of broth.

Moroccan Spiced Beef Stew with Apricots and Chickpeas

This stew combines warm spices with sweet dried apricots and tender chickpeas for a hearty meal. It works well for busy weeknights when you want something different from standard beef stew. The dish has a balanced flavor profile with notes of cumin and cinnamon alongside the chickpeas for extra texture. It suits cool weather or when you need a hands-off dinner that still feels special.

    • 4 garlic cloves, minced
    • 1 (15 oz) can chickpeas, drained and rinsed
    • 3/4 cup dried apricots, chopped
    • 1 (14 oz) can diced tomatoes
    • 3 cups beef broth
    • 1 teaspoon ground cumin
    • 1 teaspoon ground coriander
    • 1/2 teaspoon ground cinnamon
    • 1 teaspoon paprika
    • 1/2 teaspoon ground ginger
    • Salt and pepper to taste
    • Fresh cilantro, for serving

    Instructions

    • Add the beef stew meat to the bottom of the slow cooker.
    • Layer the onion, carrots, garlic, chickpeas, apricots, and diced tomatoes on top of the meat.
    • Pour the beef broth over the ingredients.
    • Sprinkle in the cumin, coriander, cinnamon, paprika, ginger, salt, and pepper. Stir gently to combine everything.
    • Cover and cook on low for 8 hours until the beef is fork-tender.
    • Ladle into bowls and top each serving with fresh cilantro.

    Notes

The apricots soften during cooking and help create a light sauce without extra thickeners. Mash a few chickpeas right in the pot if you want a heartier texture. Leftovers reheat well on the stovetop with a splash of broth to loosen the consistency. Serve over couscous or with warm flatbread to soak up the broth.

    • 1 tablespoon brown sugar
    • Fresh cilantro and lime wedges for serving

    Instructions

    • Place the beef stew meat in the bottom of the slow cooker.
    • Add the sweet potatoes, onion, garlic, and ginger on top of the meat.

    • Cover and cook on low for 8 hours until the beef is tender.
    • Stir the stew gently before serving, then top each bowl with chopped cilantro and a squeeze of lime.

    • 2 tablespoons herbes de Provence
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
    • 2 zucchini, sliced into half-moons
    • 1 cup pitted green olives

    Instructions

    • Add the beef stew meat, onion, carrots, garlic, diced tomatoes, beef broth, herbes de Provence, salt, and pepper to the crockpot. Stir once to combine.
    • Cover and cook on low for 7 hours.
    • Stir in the zucchini slices. Cover and cook for 1 more hour until the zucchini is tender but not falling apart.
    • Stir in the green olives right before serving. Taste and adjust salt if needed.

    Notes

Taste the broth before adding extra salt because the olives release quite a bit on their own. If you want a thicker sauce, remove the lid for the last 30 minutes. Leftovers reheat well the next day and the zucchini holds up better than expected.
