    • Cover and cook on low for 8 hours until the beef is fork-tender.
    • Remove the bay leaves, then stir in the cornstarch and water mixture.
    • Cook on high for 20 to 30 minutes more until the broth thickens slightly.

    Notes

    Stir the cornstarch slurry in at the end only if you prefer a thicker broth. The balsamic flavor stays bright, so taste before adding extra salt. Leftovers reheat well the next day and the potatoes stay firm rather than turning mushy.
