Slow cooker recipes work well for busy days when you want dinner ready without much effort. Hamburger stew is a filling option that uses simple ingredients like ground beef, potatoes, and carrots. This list has 13 different versions to try, from basic mixes to ones with added beans or spices. Each recipe gives clear steps and times so you can pick what fits your schedule. You can adjust most of them based on what you already have in the kitchen.

    Helpful Tips Before You Start

A few simple steps will help your hamburger stew turn out thick and flavorful every time.

    Brown the Beef First

Cook the ground beef in a skillet until no pink remains. Drain the fat well before adding it to the slow cooker.

    Cut Vegetables the Same Size

Slice carrots, potatoes, and celery into even chunks. This keeps them tender without some pieces turning mushy.

    Add Thickeners Later

Mix a quick cornstarch slurry and stir it in during the final hour. It prevents a thin broth without extra cooking time.

    Use Lean Ground Beef

Pick 90 percent lean beef to limit grease that rises to the top. The stew still tastes rich after hours of simmering.

    Equipment

    • Slow Cooker
    • Large Skillet

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, chopped
    • 3 cloves garlic, minced
    • 4 medium potatoes, diced
    • 3 carrots, sliced
    • 2 celery stalks, sliced
    • 1 can (14.5 oz) diced tomatoes
    • 4 cups beef broth
    • 1 teaspoon dried thyme
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper

    Instructions

    • Heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess fat.
    • Add the chopped onion and minced garlic to the skillet. Cook for 2 minutes until the onion softens.
    • Transfer the beef mixture to the slow cooker. Add the diced potatoes, sliced carrots, sliced celery, diced tomatoes, and beef broth.
    • Stir in the dried thyme, salt, and black pepper. Cover and cook on low for 7 to 8 hours.
    • Stir the stew before serving to check the consistency of the vegetables.

    Notes

The potatoes help thicken the broth as they cook, so avoid lifting the lid often during the final hours. If the stew seems too thick at the end, stir in a splash of extra broth. Leftovers keep well in the fridge for up to three days and reheat gently on the stove.

    Ingredients

    • 1 pound ground beef
    • 6 slices bacon, chopped
    • 1 medium onion, diced

    • 1 tablespoon smoked paprika
    • 1 teaspoon chili powder
    • Salt and pepper

    Instructions

    • Cook the chopped bacon in a large skillet over medium heat until it is crisp. Remove the bacon with a slotted spoon and set it aside, leaving the drippings in the pan.
    • Add the ground beef to the same skillet and cook until browned, breaking it up with a spoon. Stir in the diced onion and minced garlic and cook for 2 to 3 minutes until the onion softens.
    • Transfer the beef mixture and cooked bacon to the slow cooker. Add the drained kidney beans, diced tomatoes, beef broth, smoked paprika, and chili powder. Stir to combine.
    • Season with salt and pepper. Cover and cook on low for 6 to 8 hours.
    • Stir the stew before serving to distribute the ingredients evenly.

    Notes

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 cans (15 ounces each) black beans, drained and rinsed
    • 1 can (14.5 ounces) diced tomatoes
    • 2 chipotle peppers in adobo sauce, minced
    • 3 cups beef broth
    • 2 carrots, peeled and sliced
    • 1 teaspoon ground cumin
    • 1 teaspoon chili powder
    • Salt and black pepper to taste
    • Fresh cilantro, chopped, for garnish

    Instructions

    • Heat a large skillet over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion is soft. Drain any excess fat.
    • Transfer the beef mixture to the slow cooker. Add the black beans, diced tomatoes, chipotle peppers, beef broth, carrots, cumin, and chili powder.
    • Stir everything together and season with salt and black pepper.
    • Cover and cook on low for 6 to 7 hours until the carrots are tender.
    • Taste and adjust seasoning if needed. Serve hot with fresh cilantro sprinkled on top.

    Notes

If the stew tastes too spicy after cooking, stir in a spoonful of sour cream when serving to mellow the heat. Leftovers thicken more in the fridge, so add a splash of broth when reheating. The cilantro adds a fresh note that balances the smoky chipotle at the end.

The red wine adds depth while the mushrooms give a meaty texture that pairs nicely with the beef. Serve it with crusty bread to soak up the sauce.

    Ingredients

    • 1 pound ground beef
    • 8 ounces cremini mushrooms, sliced
    • 1 medium onion, chopped
    • 2 carrots, peeled and sliced
    • 2 medium potatoes, cubed
    • 1 cup dry red wine
    • 2 cups beef broth
    • 2 tablespoons tomato paste
    • 3 cloves garlic, minced
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 2 tablespoons all-purpose flour
    • 2 tablespoons fresh parsley, chopped

    Instructions

    • Heat a large skillet over medium heat and add the ground beef, onion, and garlic. Cook until the beef is browned and the onion softens, about 6 minutes. Drain excess fat.
    • Transfer the beef mixture to the slow cooker. Add the mushrooms, carrots, and potatoes.
    • In a small bowl, whisk together the red wine, beef broth, tomato paste, thyme, salt, and pepper. Pour this over the ingredients in the slow cooker.
    • Cover and cook on low for 7 hours or until the vegetables are tender.
    • In the final 30 minutes, stir the flour into 2 tablespoons of the cooking liquid to make a slurry. Add it back to the stew and stir to thicken.
    • Taste and adjust salt or pepper if needed. Sprinkle with fresh parsley before serving.

    Notes

Browning the beef first builds better flavor, so do not skip that step even if you are short on time. If the stew tastes too acidic from the wine, a pinch more salt balances it. Leftovers keep well in the fridge for three days and reheat gently on the stove with a splash of broth to loosen the texture.

    Sweet Potato Kale Hamburger Stew

This stew combines ground beef with sweet potatoes and kale for a filling meal that feels both hearty and balanced. It works well on busy weeknights when you want something warm without much active time at the stove. The sweet potatoes soften and release a mild sweetness that pairs with the savory beef and tender greens.

The slow cooker does most of the work, turning simple ingredients into a thick, comforting broth. Kale stays bright green when added near the end, and the overall texture stays chunky rather than mushy.

Creamy Potato and Chive Hamburger Stew

This stew combines tender potatoes and savory ground beef in a smooth, creamy broth that feels hearty without being heavy. The fresh chives stirred in at the end add a mild onion note that brightens each bite. It works well for weeknight dinners when you want something warm and filling with minimal effort after the slow cooker is set.

    • 1/4 cup chopped fresh chives
    • Salt and black pepper, to taste

    Instructions

    • Brown the ground beef in a large skillet over medium heat. Add the diced onion and minced garlic and cook until the onion softens and the beef is no longer pink. Drain any excess fat.
    • Transfer the beef mixture to the slow cooker. Add the cubed potatoes and beef broth. Stir to combine.
    • Cover and cook on low for 6 to 7 hours until the potatoes are fork-tender.
    • Stir in the cream cheese cubes until fully melted into the broth. Pour in the heavy cream and stir until the stew is smooth and creamy.
    • Season with salt and black pepper. Stir in most of the chopped chives and reserve a small amount for garnish if desired.

Soften the cream cheese slightly before adding it so it melts evenly without leaving lumps. If the stew thickens too much after the cream is added, stir in a splash more broth. • Stir the stew before serving to combine the ingredients evenly.

    Notes

For a thicker texture, mash a few pieces of squash against the side of the slow cooker before serving. Leftovers keep well in the fridge for up to three days and reheat easily on the stovetop with a splash of broth if needed.
