Busy weeknights often mean looking for simple meals that use ground beef. These hamburger stew recipes all come together in 30 minutes. They rely on ingredients you likely keep on hand. You will find a range of flavors from classic to slightly spiced. Each one gives clear steps for a filling dinner.

    Tips for 30-Minute Hamburger Stew

These tips keep the process simple and help each stew finish on time.

Brown the Beef in One Pot

Use the same pot for browning the ground beef and building the stew. It saves time on cleanup and lets the meat drippings flavor the broth right away.

Rely on Canned and Frozen Add-Ins

Keep canned tomatoes, beans, and frozen vegetables ready. They need no chopping and cook through in the short simmer time.

    Cut Potatoes Small

Dice potatoes into half-inch pieces so they soften within 15 minutes. Larger chunks will push the total time past 30 minutes.

Taste and Adjust at the End

Check seasoning only after the stew has simmered for 10 minutes. The flavors concentrate quickly, so you can add salt or herbs without overdoing it.

Classic Potato and Carrot Hamburger Stew

This stew combines ground beef with chunks of potato and slices of carrot in a simple broth. It comes together quickly for weeknight dinners when you want something warm and filling without much fuss.

The result is a hearty dish with soft vegetables and a mild, savory taste that appeals to both kids and adults.

    Equipment

    • Large Pot
    • Knife
    • Cutting Board

    Ingredients

    • 1 pound ground beef
    • 4 medium potatoes, peeled and diced
    • 3 large carrots, peeled and sliced
    • 1 medium onion, diced
    • 2 garlic cloves, minced
    • 4 cups beef broth
    • 2 tablespoons tomato paste
    • 1 teaspoon dried thyme
    • 1 tablespoon olive oil
    • Salt and pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion softens, breaking up the meat with a spoon as it cooks.
    • Stir in the tomato paste and thyme. Cook for one minute to blend the flavors.
    • Pour in the beef broth. Add the diced potatoes and sliced carrots. Season with salt and pepper.
    • Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 15 to 18 minutes, stirring occasionally, until the potatoes and carrots are tender.

    Notes

Cut the potatoes into even pieces so they finish cooking at the same time as the carrots. Leftovers thicken as they sit, so add a splash of broth when reheating. This stew pairs well with crusty bread for dipping.

    • Wooden spoon
    • Can opener

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, chopped
    • 2 cloves garlic, minced
    • 1 red bell pepper, diced
    • 1 tablespoon chili powder
    • 1 teaspoon ground cumin
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 can (15 oz) corn kernels, drained
    • 1 can (14.5 oz) diced tomatoes with green chilies
    • 2 cups beef broth
    • Salt and pepper to taste
    • Fresh cilantro, chopped (for serving)
    • Lime wedges (for serving)

    Instructions

    • Place a large pot over medium heat and add the ground beef. Cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Add the chopped onion, minced garlic, and diced red bell pepper to the pot. Cook for 3 to 4 minutes until the vegetables soften.
    • Stir in the chili powder and ground cumin. Cook for 1 minute to toast the spices.
    • Add the drained black beans, drained corn, diced tomatoes with green chilies, and beef broth. Stir everything together.
    • Bring the mixture to a simmer and cook for 10 minutes, stirring occasionally. Season with salt and pepper to taste.
    • Ladle the stew into bowls and top with chopped cilantro. Serve with lime wedges on the side.

    Notes

Use fire-roasted diced tomatoes if available for deeper flavor. The stew thickens as it sits, so add a splash of broth when reheating leftovers. Skip the cilantro if you prefer a milder finish, or add a pinch more cumin if you want stronger earthy notes.

Italian Tomato Basil Hamburger Stew with White Beans

This Italian Tomato Basil Hamburger Stew with White Beans turns basic ground beef into a hearty meal with creamy white beans and a tomato broth. Fresh basil stirred in at the end gives it a bright, herbal note that balances the richness.

    Equipment

    • Large Pot
    • Wooden Spoon

    Ingredients

    • 1 pound ground beef
    • 1 medium onion, diced
    • 3 garlic cloves, minced
    • 2 tablespoons olive oil
    • 1 teaspoon Italian seasoning
    • Salt and black pepper to taste
    • 1 can (28 ounces) crushed tomatoes
    • 2 cups beef broth
    • 1 can (15 ounces) white beans, drained and rinsed
    • 1/4 cup fresh basil leaves, chopped

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef, onion, and garlic. Cook, breaking up the beef with a spoon, until it is browned and the onion has softened, about 6 minutes.
    • Stir in the Italian seasoning along with salt and black pepper to taste.
    • Pour in the crushed tomatoes and beef broth. Add the white beans and stir to combine.
    • Bring the mixture to a simmer. Cook uncovered for 15 minutes, stirring now and then, until the stew has thickened slightly.
    • Remove the pot from the heat and stir in the chopped basil. Serve hot.

    Notes

Mashing a few white beans against the side of the pot during the simmer creates a thicker broth without any extra ingredients. Fresh basil loses flavor if added too early, so stir it in only after the heat is off. Leftovers reheat well on the stove with a splash of broth to loosen the texture.

The recipe works well on weeknights when you want something different from standard beef stews. It keeps prep minimal and relies on one pot for easy cleanup. The ginger and soy create a balanced flavor that pairs nicely with rice or noodles on the side.

    • Knife
    • Cutting board

    Ingredients

    • 1 pound ground beef
    • 1 tablespoon fresh ginger, minced
    • 3 tablespoons soy sauce
    • 1 onion, diced
    • 2 carrots, sliced thin
    • 1 red bell pepper, sliced
    • 2 cups chopped bok choy
    • 2 cloves garlic, minced
    • 2 cups beef broth
    • 1 tablespoon sesame oil
    • 2 green onions, sliced

    Instructions

    • Heat the sesame oil in a large pot over medium heat. Add the ground beef, minced ginger, and garlic. Cook until the beef is browned and broken into small pieces, about 5 minutes.
    • Stir in the diced onion, sliced carrots, and red bell pepper. Cook for 3 minutes until the vegetables begin to soften.
    • Pour in the beef broth and soy sauce. Bring the mixture to a simmer and cook for 8 minutes.
    • Add the chopped bok choy and simmer for 3 more minutes until it wilts but stays bright.
    • Remove the pot from heat and divide the stew into bowls. Top each serving with sliced green onions.

    Notes

Slice the carrots thin so they cook evenly in the short simmer time. If the broth tastes too salty, add a splash of water at the end. Leftovers reheat well on the stove with a little extra broth to loosen the texture. Bok choy can be swapped for baby spinach if needed, but add it in the last minute only.

Cajun Spicy Bell Pepper Hamburger Stew

This stew combines ground beef with plenty of bell peppers and a bold Cajun spice blend for a quick, hearty meal. The peppers soften just enough to add sweetness while the cayenne brings steady heat that builds with each bite. It suits busy weeknights when you want something filling without much fuss.

The finished dish has a chunky texture with tender beef pieces in a lightly thickened broth. Serve it straight from the pot for maximum warmth and flavor.

    Ingredients

    • 1 pound ground beef
    • 1 tablespoon vegetable oil
    • 1 yellow onion, diced
    • 2 bell peppers, diced
    • 2 cloves garlic, minced
    • 2 tablespoons Cajun seasoning
    • 1/4 teaspoon cayenne pepper
    • 1 (14.5 ounce) can diced tomatoes
    • 4 cups beef broth
    • Salt to taste

    Instructions

    • Heat the vegetable oil in a large pot over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until it is no longer pink.
    • Add the diced onion, bell peppers, and minced garlic to the pot. Stir and cook for 4 to 5 minutes until the vegetables begin to soften.
    • Sprinkle in the Cajun seasoning and cayenne pepper. Stir for 30 seconds to coat the meat and vegetables evenly.
    • Pour in the diced tomatoes with their juice and the beef broth. Bring the mixture to a boil, then reduce the heat and simmer uncovered for 15 minutes.
    • Taste and add salt if needed. Remove from heat and let the stew rest for a minute before serving.

    Notes

Start with half the cayenne and add more at the end if you prefer less heat, since the Cajun seasoning already carries some spice. The stew thickens slightly after it cools, so add a splash of broth when reheating leftovers to loosen it back up.

Smoky Paprika Cabbage and Sausage-Style Hamburger Stew

This stew brings together ground beef with cabbage in a smoky broth that tastes like sausage without extra meat. The paprika and fennel give it depth while the cabbage softens just enough to add texture without turning mushy. It works well on busy weeknights when you want something filling that still comes together fast.

The flavor leans savory and slightly smoky with a hint of heat. Cabbage releases its own liquid during cooking, which helps create a light broth that clings to the beef.

    Ingredients

    • 1 tablespoon olive oil
    • 1 pound ground beef
    • 1 medium onion, diced
    • 2 cloves garlic, minced
    • 2 teaspoons smoked paprika
    • 1 teaspoon fennel seeds
    • 1/2 teaspoon red pepper flakes
    • 4 cups shredded green cabbage
    • 1 can (14.5 ounces) diced tomatoes
    • 3 cups beef broth
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Stir in the onion and garlic. Cook for 2 minutes until the onion starts to soften.
    • Add the smoked paprika, fennel seeds, and red pepper flakes. Stir for 30 seconds to toast the spices with the beef.
    • Add the shredded cabbage, diced tomatoes with their juice, beef broth, salt, and black pepper. Stir to combine.
    • Bring the mixture to a simmer, then reduce the heat to medium-low. Cook uncovered for 15 minutes, stirring occasionally, until the cabbage is tender but still has some bite.
    • Taste and adjust salt if needed before serving.

    Notes

For the best sausage-style flavor, do not skip the fennel seeds. If you want a thicker stew, mash a few pieces of cabbage with the back of your spoon near the end of cooking. Leftovers keep well in the fridge for three days and reheat easily on the stove with a splash of broth.

    • 4 cups beef broth
    • 4 cups chopped kale
    • 1 teaspoon dried thyme
    • Salt and pepper to taste

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef, onion, and garlic. Cook until the beef is browned and the onion softens, breaking up the meat as it cooks.
    • Stir in the sweet potatoes and beef broth. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes until the sweet potatoes are tender.
    • Add the kale and thyme to the pot. Stir and cook for another 5 minutes until the kale wilts.
    • Season with salt and pepper. Serve hot.

    Notes

Cut the sweet potatoes into even small pieces so they finish cooking in the same time as the rest of the stew. Add the kale only at the end to keep some of its texture instead of letting it overcook. Leftovers store well in the fridge for a couple of days and reheat best on the stove with a little extra broth to loosen the consistency.

    • 1 medium onion, diced
    • 2 carrots, peeled and diced

    • 2 cloves garlic, minced
    • 1 tablespoon tomato paste
    • 1 teaspoon dried thyme
    • Salt and pepper to taste
    • 1 tablespoon olive oil

    Instructions

    • Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.
    • Add the diced onion, carrots, and sliced mushrooms to the pot. Cook for 5 minutes until the vegetables start to soften.
    • Stir in the minced garlic, tomato paste, and dried thyme. Cook for 1 minute until the tomato paste darkens slightly.
    • Pour in the beef broth and add the quick-cooking barley. Season with salt and pepper.
    • Bring the mixture to a boil, then reduce to a simmer. Cook uncovered for 15 to 18 minutes until the barley is tender and the stew has thickened.

    Notes

If the barley absorbs too much liquid during simmering, add a splash more broth to reach your preferred consistency. Leftovers keep well in the fridge for three days and reheat smoothly on the stove with a little extra water. Skip the thyme if you prefer a milder herb flavor and use button mushrooms in place of cremini when needed.
