Feeding a big family means needing meals that come together without much extra work. Crockpot casseroles are useful here because they cook on their own and usually feed a crowd. These 13 ideas focus on cheesy versions that hold up well for leftovers too. Each recipe uses common ingredients and simple steps you can follow on a busy day. You can pick the ones that match what you already have on hand.

    Helpful Tips Before You Start

These tips will help your cheesy crockpot casseroles feed a crowd without extra stress.

    Shred Your Own Cheese

Pre-shredded cheese often contains additives that prevent smooth melting. Grate a block of cheddar or mozzarella right before adding it to the pot.

    Pick the Right Size Cooker

Use at least a 6-quart crockpot for recipes meant to serve eight or more. Smaller models can overflow or cook unevenly with big batches.

    Layer the Ingredients

Alternate thin layers of pasta or rice, sauce, and cheese. This helps the cheese melt evenly and prevents dry spots in the center.

    Assemble Ahead of Time

Mix and layer everything in the crockpot insert the night before. Cover and refrigerate, then start cooking in the morning so dinner is ready on schedule.

    Test for Doneness Early

Casseroles often finish faster than the stated cook time. Check at the two-hour mark and every 30 minutes after to avoid overcooked edges.

It works well for weeknight dinners when you want a full meal with minimal effort. The result is a hearty dish with comforting flavors and a mix of soft and slightly crisp textures.

It is especially useful for feeding a family without standing over the stove. Everything cooks together in one pot, making cleanup simple.

    Equipment

    • Slow Cooker

    Ingredients

    • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
    • 1 cup uncooked long-grain white rice
    • 2 cups broccoli florets
    • 1 (10.5 oz) can cream of chicken soup
    • 1 1/2 cups chicken broth
    • 2 cups shredded cheddar cheese, divided
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions

    • Place the chicken pieces, uncooked rice, cream of chicken soup, chicken broth, garlic powder, salt, and black pepper in the crockpot. Stir until the rice is coated and the mixture is evenly combined.
    • Cover and cook on low for 4 hours, or until the rice is tender and the chicken is cooked through.
    • Stir in the broccoli florets and 1 1/2 cups of the shredded cheddar cheese. Cover and cook for an additional 30 minutes on low.
    • Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Cover for 5 minutes to let the cheese melt before serving.

    Notes

Stir the rice once halfway through cooking to prevent it from sticking to the bottom. Use fresh broccoli for better texture, or add it frozen if you prefer softer pieces. Leftovers reheat well in the microwave with a splash of broth to loosen the sauce.

    • Slow Cooker
    • Large Skillet
    • Mixing Bowl

    Ingredients

    • 1 pound ground beef
    • 1 small onion, chopped
    • 8 ounces fresh mushrooms, sliced
    • 3 cups beef broth
    • 1 teaspoon garlic powder
    • 8 ounces wide egg noodles
    • 1 cup sour cream
    • 2 cups shredded cheddar cheese
    • Salt and pepper to taste

    Instructions

    • In a large skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain any excess fat.
    • Transfer the beef mixture to the slow cooker. Add the mushrooms, beef broth, garlic powder, salt, and pepper. Stir to combine.
    • Cover and cook on low for 6 hours.
    • Stir in the egg noodles, cover again, and cook for 30 more minutes until the noodles are tender.
    • Turn off the heat. Stir in the sour cream and 1 1/2 cups of the cheddar cheese until the sauce is smooth and the cheese has melted.
    • Sprinkle the remaining 1/2 cup of cheese over the top and let it melt before serving.

    Notes

Add the sour cream only after the cooking time ends so it stays smooth and does not separate. If the noodles seem dry at the end, stir in a small splash of warm broth. Leftovers keep in the fridge for two days and reheat best with a little extra liquid stirred in.

    • 2 cups shredded cheddar cheese

    • 1 teaspoon garlic powder
    • Salt and black pepper to taste

    Instructions

    • Place half the sliced potatoes in an even layer in the bottom of the slow cooker.
    • Add half the onion slices, half the diced ham, and half the shredded cheddar cheese over the potatoes. Sprinkle with half the garlic powder plus salt and black pepper.
    • Repeat the layers with the remaining potatoes, onion, ham, and cheese. Finish with the rest of the garlic powder, salt, and black pepper.

    • Cover and cook on low for 6 to 7 hours until the potatoes are tender when pierced with a fork.

    • 2 cups marinara sauce
    • 2 cups shredded mozzarella cheese
    • 1/2 cup grated Parmesan cheese
    • 1 teaspoon Italian seasoning
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper

    Instructions

    • Brown the Italian sausage in a skillet over medium heat, breaking it into crumbles as it cooks. Drain any excess fat.
    • Add the sliced bell peppers, onion, and minced garlic to the slow cooker. Stir in the cooked sausage, marinara sauce, Italian seasoning, salt, and black pepper.
    • Cover and cook on low for 4 hours until the peppers and onion are tender.

    • Cover and cook on low for 6 hours or on high for 3 hours, until the potatoes are tender when pierced with a fork.
    • Stir in the sour cream until it is fully mixed and the casserole looks creamy.
    • Sprinkle the remaining 1/2 cup of cheddar cheese on top, then cover and cook for 10 more minutes until the cheese melts.
    • Turn off the slow cooker. Top with the crumbled bacon and sliced green onions before serving.

    Notes

Stir the sour cream in after the potatoes are fully cooked so it stays smooth instead of separating. If you want a thicker texture, drain any liquid that collects at the bottom before adding the sour cream. Leftovers reheat well in the microwave with a splash of milk to loosen the sauce.
