Crockpot meals work well when you need dinner ready without much effort.

These chicken pot pie recipes focus on make-ahead steps and basic ingredients.

You can prep them in advance and have a warm option for weeknights or family meals.

The list includes different variations to match what you already have on hand.

    Helpful Tips Before You Start

These tips will help your crockpot chicken pot pie recipes turn out creamy and satisfying.

    Use Frozen Vegetables

They hold their shape better during long cooking and cut down on chopping time.

    Thicken the Filling Later

Stir in a cornstarch slurry during the final hour to reach the right gravy consistency.

    Shred Chicken After Cooking

This keeps the meat tender and allows it to soak up the sauce flavors evenly.

    Prep the Filling Ahead

Cook and cool the filling the night before, then refrigerate it for quick assembly the next day.

    Add Biscuits at the End

Place refrigerated biscuit dough on top during the last 30 minutes so they bake without getting soggy.

Classic Crockpot Chicken Pot Pie with Carrots, Celery, and Buttermilk Biscuits

This crockpot version keeps the familiar flavors of chicken pot pie while cutting down on active time. The slow cooker handles the filling, turning out tender chicken with soft carrots and celery in a light gravy. Buttermilk biscuits baked on the side add a flaky top that stays crisp until serving.

It works well for weeknight dinners or weekend meal prep when you want something warm and filling without much fuss. The result tastes homey, with mild herbs and creamy texture that pairs nicely with the biscuits.

    Equipment

    • Slow Cooker
    • Baking Sheet
    • Knife
    • Cutting Board

    Ingredients

    • 1 pound boneless skinless chicken breasts
    • 3 carrots, peeled and sliced
    • 3 celery stalks, sliced
    • 1 medium onion, diced
    • 2 cups chicken broth
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 cup heavy cream
    • 2 tablespoons cornstarch mixed with 2 tablespoons water
    • 6 buttermilk biscuits

    Instructions

    • Place the chicken breasts in the slow cooker. Add the sliced carrots, sliced celery, diced onion, chicken broth, thyme, salt, and black pepper.
    • Cover and cook on low for 6 hours or high for 3 hours until the chicken is fully cooked and the vegetables are tender.
    • Remove the chicken, shred it with two forks, and return it to the slow cooker.
    • Stir in the heavy cream and the cornstarch slurry. Cook on high for 20 more minutes until the filling thickens.
    • While the filling thickens, bake the buttermilk biscuits according to package or recipe directions until golden.
    • Spoon the filling into bowls and top each serving with a warm biscuit.

    Notes

Bake the biscuits right before serving so they stay flaky against the creamy filling. If the gravy seems too thin after the cornstarch step, let it cook uncovered for a few extra minutes. Leftovers keep in the fridge for three days and reheat well on the stove with a splash of broth to loosen the sauce.

Slow Cooker Mushroom Chicken Pot Pie with Thyme and Red Wine Gravy

This version brings earthy mushrooms and a rich red wine gravy together with tender chicken for a deeper, more savory pot pie filling. It works well for weeknight dinners when you want something warm and hands-off, or for weekends when you can let the slow cooker handle the heavy lifting while you prep sides.

The result is a thick, comforting stew with chunks of chicken and vegetables in a thyme-scented gravy that tastes even better the next day. Serve it topped with biscuits to complete the pot pie feel without extra fuss.

    Equipment

    • Slow Cooker
    • Knife
    • Cutting Board
    • Measuring Cups

    Ingredients

    • 1 pound boneless skinless chicken thighs
    • 8 ounces cremini mushrooms, sliced
    • 1 medium onion, chopped
    • 3 carrots, peeled and sliced
    • 2 celery stalks, sliced
    • 3 garlic cloves, minced
    • 1/2 cup red wine
    • 1 1/2 cups chicken broth
    • 2 tablespoons all-purpose flour
    • 1 teaspoon dried thyme
    • 1 cup frozen peas
    • Salt and black pepper
    • 4 store-bought biscuits, baked according to package directions

    Instructions

    • Place the chicken thighs, sliced mushrooms, chopped onion, sliced carrots, sliced celery, and minced garlic into the slow cooker.
    • In a small bowl, whisk the flour with 1/2 cup of the chicken broth until smooth. Pour this mixture into the slow cooker along with the red wine, remaining broth, dried thyme, and a pinch of salt and pepper. Stir gently to combine.
    • Cover and cook on low for 6 hours, until the chicken is tender and the vegetables are soft.
    • Remove the chicken thighs, shred them with two forks, and return the meat to the slow cooker. Stir in the frozen peas and let everything sit for 10 minutes so the peas warm through and the gravy thickens slightly.
    • Spoon the filling into bowls and top each serving with a baked biscuit.

    Notes

The red wine reduces during the long cook time and leaves a mellow depth behind, so use one you would actually drink. If the gravy seems too thin at the end, remove the lid for the last 30 minutes. Leftovers reheat well on the stovetop with a splash of broth to loosen the sauce, and the flavors continue to meld nicely in the fridge for up to three days.

Crockpot Chicken Pot Pie with Sweet Potatoes and Sage Brown Butter

This version swaps regular potatoes for sweet potatoes, which bring a gentle sweetness that pairs well with the savory chicken and vegetables. The sage brown butter stirred in at the end adds a nutty, aromatic note that sets the filling apart from standard pot pie. It works well for busy weeks when you want a warm, make-ahead meal that reheats nicely.

The finished dish has tender chunks of chicken and soft sweet potato in a creamy sauce with a hint of herb. Serve it over split biscuits or with a simple side salad for a complete meal.

    Ingredients

    • 1.5 lbs boneless skinless chicken thighs, cut into bite-size pieces
    • 2 medium sweet potatoes, peeled and diced
    • 1 medium onion, diced
    • 2 carrots, sliced
    • 2 celery stalks, sliced
    • 3 cups chicken broth
    • 1 cup heavy cream
    • 1/4 cup all-purpose flour
    • 4 tbsp unsalted butter
    • 8 fresh sage leaves
    • 1 tsp dried thyme
    • 1 cup frozen peas
    • 1 tsp salt
    • 1/2 tsp black pepper

    Instructions

    • Add the chicken thighs, sweet potatoes, onion, carrots, celery, chicken broth, flour, thyme, salt, and pepper to the slow cooker. Stir to combine everything evenly.
    • Cover and cook on low for 6 to 7 hours, until the chicken is cooked through and the sweet potatoes are tender.
    • Stir in the heavy cream and frozen peas. Let the mixture cook for 10 more minutes while you prepare the brown butter.
    • Melt the butter in a small skillet over medium heat. Add the sage leaves and cook, swirling the pan, until the butter turns golden brown and smells nutty. Remove from heat.
    • Pour the sage brown butter into the slow cooker and stir gently to distribute the flavor through the filling.

    Notes

Stir the peas in only at the end so they stay bright and keep some texture. If the filling seems too thin after adding the cream, mix a teaspoon of cornstarch with a splash of cold water and stir it in during the last 10 minutes. Leftovers reheat well on the stovetop with a splash of broth to loosen the sauce.

The cheddar biscuit topping adds a golden, cheesy finish that makes the whole dish feel like classic comfort food. It works well for busy weeknights when you want a full meal ready with little effort, and the leftovers reheat nicely for lunch the next day.

    Ingredients

    • 1 pound boneless skinless chicken thighs, cut into bite-size pieces
    • 3 medium potatoes, diced
    • 1 ½ cups frozen corn kernels
    • 2 cups chicken broth
    • 1 cup heavy cream
    • 2 cups shredded cheddar cheese, divided
    • 1 cup all-purpose flour
    • 2 teaspoons baking powder
    • ¼ cup cold butter, cubed
    • ½ cup milk
    • ½ teaspoon salt
    • ¼ teaspoon black pepper
    • ½ teaspoon dried thyme

    Instructions

    • Add the chicken pieces, diced potatoes, corn, chicken broth, heavy cream, salt, pepper, and thyme to the slow cooker. Stir to combine.
    • Cover and cook on low for 6 hours or until the potatoes are tender and the chicken is cooked through.
    • Stir in 1 cup of the shredded cheddar cheese until it melts into the sauce.
    • In a mixing bowl, combine the flour, baking powder, and remaining 1 cup of cheddar cheese. Cut in the cold butter until the mixture looks like coarse crumbs.
    • Pour in the milk and stir just until a soft dough forms. Drop spoonfuls of the dough onto the hot filling in the slow cooker.
    • Cover and cook on high for 1 more hour until the biscuit topping is cooked through and no longer doughy in the center.

    Notes

Shred the cheddar from a block instead of using pre-shredded cheese so it melts smoothly into the sauce. If the biscuit topping needs more color, transfer the finished dish to a baking sheet and broil for 2 to 3 minutes. Leftovers keep in the fridge for up to three days and reheat best in a covered skillet with a splash of broth to loosen the sauce.

    • 1/2 cup heavy cream
    • 1 cup frozen peas
    • 1 tsp salt
    • 1/2 tsp black pepper
    • 1 can (8 count) refrigerated biscuits

    Instructions

    • Place the chicken thighs, parsnips, leeks, chicken broth, salt, and pepper into the slow cooker. Stir to combine.
    • Cover and cook on low for 6 hours until the chicken is tender and the vegetables are soft.
    • In a small bowl, whisk the flour and heavy cream until smooth. Stir the mixture into the slow cooker.
    • Add the frozen peas and chopped tarragon. Cover and cook on high for 30 minutes until the filling thickens.
    • While the filling finishes, bake the biscuits according to the package directions until golden.
    • Spoon the filling into bowls and top each serving with a warm biscuit.

    Notes

Add the tarragon only in the final step so its flavor stays bright instead of fading during the long cook. If the filling seems too thin after the cream step, mix an extra tablespoon of flour with a splash of broth before stirring it in. Leftovers keep well in the fridge for three days and reheat gently on the stove with a little extra broth to loosen the sauce.

Crockpot Chicken Pot Pie with Bacon, Pearl Onions, and Rosemary Dumplings

This recipe combines smoky bacon and sweet pearl onions with tender chicken for a filling that feels both familiar and a little special. The rosemary dumplings cook right on top in the slow cooker, soaking up the broth while staying light and fluffy. It works well for make-ahead meals since everything goes in the pot and finishes with minimal hands-on time.

The result is a creamy chicken stew topped with herb dumplings that hold their shape. Pearl onions stay whole for bursts of sweetness, while bacon adds a savory edge throughout the dish.

    • 3 carrots, peeled and sliced

    • 4 cups chicken broth
    • 1 teaspoon dried thyme

    • 1/2 teaspoon black pepper
    • 1 cup frozen peas
    • 1 1/2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1 tablespoon fresh rosemary, chopped
    • 1/2 teaspoon salt
    • 3/4 cup milk
    • 2 tablespoons butter, melted

    Instructions

    • Place the chicken, bacon, pearl onions, carrots, celery, chicken broth, thyme, salt, and pepper into the slow cooker. Stir to combine.
    • Cover and cook on low for 6 hours until the chicken is tender and the vegetables are soft.
    • Stir in the frozen peas.
    • In a mixing bowl, whisk together the flour, baking powder, rosemary, and salt. Add the milk and melted butter, then stir until a soft dough forms.
    • Drop spoonfuls of the dumpling dough evenly over the surface of the hot filling.
    • Cover and cook on high for 1 hour until the dumplings are cooked through and no longer doughy in the center.

    Notes

Cook the bacon pieces from the start so they soften into the broth and flavor the whole pot. If you prefer crisp bacon bits, fry a few extra slices separately and sprinkle them on just before serving. The dumplings expand as they cook, so space the spoonfuls evenly without overlapping.

The wild rice keeps its chew while the sauce turns rich and savory from the slow simmer.

It suits cool evenings when you need something warm and filling that can be prepped ahead. The peas add a bit of sweetness and color at the end, and the biscuit topping gives the classic pot pie finish without much extra work.

    • Remove the chicken, shred it with two forks, and return it to the slow cooker.
    • Stir the frozen peas into the mixture.

    • While the sauce thickens, bake the biscuits according to the package directions.

Crockpot Chicken Pot Pie with Butternut Squash, Green Beans, and Flaky Pastry

This version brings together tender chicken, sweet butternut squash, and crisp green beans in a creamy filling that cooks low and slow. The flaky pastry bakes separately and gets placed on top just before serving, which keeps it light and crisp. It works well for weekend meal prep or a weeknight dinner when you want something warm and filling without much hands-on time.

The flavors lean savory with a hint of thyme and a touch of natural sweetness from the squash. Green beans add a fresh bite that balances the creaminess. Everything comes together in one pot before the final pastry step, making it easy to portion and reheat later in the week.

    • 2 cups cubed butternut squash
    • 1 cup fresh green beans, trimmed and cut into 1-inch pieces
    • 1 small onion, diced
    • 2 cloves garlic, minced
    • 2 cups chicken broth
    • 1/2 cup heavy cream
    • 2 tbsp all-purpose flour
    • 1 tsp dried thyme
    • 1/2 tsp salt
    • 1/4 tsp black pepper
    • 1 sheet puff pastry, thawed
    • 1 egg, beaten

    Instructions

    • Place the chicken breasts in the slow cooker. Add the cubed butternut squash, green beans, diced onion, and minced garlic.
    • Pour in the chicken broth. Cover and cook on low for 6 hours or until the chicken is tender and the squash is soft.
    • Remove the chicken, shred it with two forks, and return it to the slow cooker.
    • In a small bowl, whisk the heavy cream with the flour, thyme, salt, and pepper until smooth. Stir this mixture into the slow cooker.
    • Cover and cook on high for 20 more minutes to thicken the filling.
    • While the filling thickens, preheat the oven to 400°F. Cut the puff pastry into four squares and place them on a baking sheet. Brush with the beaten egg.
    • Bake the pastry for 12 to 15 minutes until golden and puffed.
    • Ladle the filling into bowls and top each serving with one piece of flaky pastry.

    Notes

For the best texture, add the pastry right before serving so it stays crisp instead of softening in the steam. If you want a thicker filling, stir in an extra tablespoon of flour during the last 20 minutes. Leftovers keep well in the fridge for three days; reheat the filling on the stovetop and warm the pastry separately in the oven.

    • Place the chicken thighs, onion, carrots, artichoke hearts, chicken broth, thyme, rosemary, salt, and pepper in the slow cooker. Stir to combine.
