Potluck dishes need to travel well and still taste good after a few hours.

Creamy casseroles tend to work because they stay moist and reheat easily.

The recipes below use basic ingredients and clear steps so you can prep them without extra stress.

Most can be assembled ahead of time and baked just before you leave.

You will find options that suit different group sizes and tastes.

    Helpful Tips Before You Start

These tips help you prepare creamy casseroles that travel well and serve a crowd without fuss.

    Choose a sturdy pan

Use a disposable aluminum pan or a heavy ceramic dish so the casserole stays intact during transport.

    Assemble the night before

Mix and layer everything in advance, then cover and refrigerate so the flavors blend and baking day stays simple.

    Boost the creaminess

Stir in a few ounces of cream cheese or Greek yogurt with the soup base to keep the sauce thick after baking.

    Add a crunchy topping later

Pack crushed crackers or fried onions separately and sprinkle them on just before reheating at the potluck.

    • Large Mixing Bowl
    • Oven

    Ingredients

    • 2 cups shredded cooked chicken
    • 2 cups broccoli florets
    • 2 cups cooked rice
    • 1 can (10.5 oz) cream of chicken soup
    • 1/2 cup milk
    • 1 1/2 cups shredded cheddar cheese, divided
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 teaspoon garlic powder

    Instructions

    • Preheat the oven to 375°F and lightly grease a 9×13-inch baking dish.
    • In a large mixing bowl, combine the cream of chicken soup and milk until smooth. Stir in the salt, black pepper, and garlic powder.
    • Add the shredded chicken, broccoli florets, cooked rice, and 1 cup of the cheddar cheese to the bowl. Mix until everything is evenly coated.

    • 9×9 baking dish
    • Mixing bowl

    Ingredients

    • 8 ounces wide egg noodles
    • 1 pound lean ground beef
    • 1 small onion, diced
    • 8 ounces cremini mushrooms, sliced
    • 2 cloves garlic, minced
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 1 1/2 cups beef broth
    • 1 cup sour cream
    • 1 teaspoon paprika
    • 1 teaspoon Worcestershire sauce
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup shredded mozzarella cheese
    • 2 tablespoons chopped fresh parsley

    Instructions

    • Preheat the oven to 350 degrees F and grease a 9×9 inch baking dish. Cook the egg noodles in a large pot of salted boiling water until just al dente, then drain and set aside.
    • In a large skillet over medium heat, brown the ground beef, breaking it up as it cooks. Once the beef is no longer pink, add the diced onion and sliced mushrooms. Cook until the vegetables soften, about 5 minutes.
    • Stir in the minced garlic and cook for 1 minute more. Push the beef mixture to one side of the skillet, add the butter to the empty space, and whisk in the flour. Cook the flour for 1 minute.
    • Slowly pour in the beef broth while whisking to create a smooth sauce. Bring to a simmer and cook until slightly thickened. Remove the skillet from the heat and stir in the sour cream, paprika, Worcestershire sauce, salt, and pepper.
    • Combine the drained noodles with the beef and sauce mixture in the skillet or a large bowl. Transfer everything to the prepared baking dish and sprinkle the shredded mozzarella evenly over the top.
    • Bake for 20 minutes until the cheese is melted and the edges are bubbling. Remove from the oven and let it rest for 5 minutes before sprinkling with chopped parsley and serving.

    Notes

Make this ahead by assembling the casserole up to the baking step, covering it, and refrigerating for up to one day. Add an extra 10 minutes to the bake time if starting from cold. Leftovers reheat well in the microwave with a splash of broth stirred in to loosen the sauce.

    • Baking dish

    Ingredients

    • 1 cup uncooked wild rice
    • 8 ounces cremini mushrooms, sliced
    • 1 medium onion, diced
    • 3 cloves garlic, minced
    • 2 tablespoons butter
    • 2 cups vegetable broth
    • 1 cup heavy cream
    • 1 teaspoon dried thyme
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 cup shredded cheddar cheese
    • 1/2 cup breadcrumbs

    Instructions

    • Rinse the wild rice under cold water, then place it in a saucepan with the vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 45 minutes until the rice is tender and most liquid is absorbed.
    • While the rice cooks, melt the butter in a large skillet over medium heat. Add the diced onion and cook for 4 minutes until softened.
    • Stir in the sliced mushrooms and minced garlic. Cook for 6 minutes until the mushrooms release their liquid and start to brown.
    • Pour in the heavy cream, then add the dried thyme, salt, and black pepper. Simmer for 3 minutes to thicken slightly.
    • Preheat the oven to 375°F. Combine the cooked wild rice with the mushroom cream mixture in a large bowl. Stir in half the shredded cheddar cheese.
    • Transfer the mixture to a greased 8×8 baking dish. Sprinkle the remaining cheese and the breadcrumbs evenly over the top.
    • Bake for 20 minutes until the top is golden and the edges bubble. Let it rest for 5 minutes before serving.

    Notes

Cook the wild rice just until tender so it does not turn mushy after baking. Use cremini mushrooms for deeper flavor, and add the breadcrumbs only at the end to keep them crisp. Leftovers reheat well in a 350°F oven with a splash of broth to restore creaminess.

    • 1 cup panko breadcrumbs

    • In a saucepan over medium heat, melt 2 tablespoons butter. Whisk in the flour and cook for one minute. Slowly pour in the milk while whisking until the mixture thickens into a smooth sauce.
    • Remove the sauce from the heat. Stir in the flaked tuna, frozen peas, salt, and black pepper until evenly combined. Add the drained noodles and gently fold everything together.

    • Bake for 20 to 25 minutes until the sauce is bubbling around the edges and the breadcrumb topping is golden brown. Let the casserole rest for five minutes before serving.

    Notes

Use panko instead of regular breadcrumbs for a lighter, crunchier finish that holds up after reheating. • In a mixing bowl, stir together the ricotta cheese and heavy cream until smooth.
