Vietnamese-Style Vermicelli Salad with Shredded Carrots and Crushed Peanuts

Ingredients
- 8 oz rice vermicelli noodles
- 2 cups shredded carrots
- 1 cucumber, julienned
- 1/4 cup chopped fresh mint
- 1/4 cup chopped fresh cilantro
- 2 green onions, thinly sliced
- 1/2 cup crushed peanuts
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- 1 garlic clove, minced
- 1/2 teaspoon red chili flakes
Instructions
- Bring a large pot of water to a boil. Add the rice vermicelli noodles and cook according to package directions until just tender. Drain and rinse under cold water to stop cooking. Set aside to drain fully.
- In a small bowl, whisk together the fish sauce, lime juice, sugar, minced garlic, and red chili flakes until the sugar dissolves.
- Place the cooled noodles in a large mixing bowl. Add the shredded carrots, julienned cucumber, chopped mint, chopped cilantro, and sliced green onions. Pour the dressing over the top and toss gently until everything is evenly coated.
- Transfer the salad to a serving bowl or platter. Sprinkle the crushed peanuts over the surface just before serving.
